Now here’s the deal. I love me some ebelskivers. And I’m fairly set in my ways. I’ve been using the same two cast iron ebelskiver pans and the same knitting needle (or a pair of metal chopsticks if I get all wild and crazy) for the past 11 years and I can’t say enough about the pans that I have.

The key to the cast iron pan working to create perfect ebelskivers is for it to be properly seasoned. There are lots of articles and how-to’s online to do this so I won’t go into that, but if you win one of these cast iron pans (or buy one on your own), promise me with all your heart and soul you will season it. And then you’ll be good to go. Also, take care to dry it completely before storing it so it doesn’t rust and I always give it a light rub with oil before putting it away inside a ziploc bag in the cupboard.

Most of the reviews on Amazon are positive for the cast iron ebelskiver pans. The negative reviews consist of people who say everything sticks (and I’m betting they didn’t follow the season-your-cast-iron-pan-lecture) or that the cups are too small. Some people only flip ebelskivers once – like a pancake (but in the round cups). I don’t make them like that. I can see if you did want to do that then the size of this ebelskiver pan would be too small but the way I make them, turning them often to create a fluffy ball of ebelskiver, works magically well with the cast iron pan.

Here’s another cast iron ebelskiver pan (Camp Chef brand) that looks to be a bit wider on the bottom and generally just a tad bigger than my favorites. Can you tell that I’m a fan of the cast iron variety of pans?

Recently (or fairly recently) there have been a few larger, nonstick pans come on the market. This one has pretty high reviews on Amazon and it looks to be a bit larger than the one I have (both the cup size and in diameter).

I don’t think the ebelskivers themselves need to be larger but I can see how the nonstick coating would appeal to many. The only caution I’d give is to be careful not to scratch it up as you are turning the ebelskivers with your old knitting needle (might need to use a silicone type tool here). Since I have neither seen this pan in real life nor used it, I’m not giving any of these away today but if you are in the market to buy an ebelskiver pan, your research might lead you this direction.
