Now here’s the deal. I love me some ebelskivers. And I’m fairly set in my ways. I’ve been using the same two cast iron ebelskiver pans and the same knitting needle (or a pair of metal chopsticks if I get all wild and crazy) for the past 11 years and I can’t say enough about the pans that I have.

The key to the cast iron pan working to create perfect ebelskivers is for it to be properly seasoned. There are lots of articles and how-to’s online to do this so I won’t go into that, but if you win one of these cast iron pans (or buy one on your own), promise me with all your heart and soul you will season it. And then you’ll be good to go. Also, take care to dry it completely before storing it so it doesn’t rust and I always give it a light rub with oil before putting it away inside a ziploc bag in the cupboard.

Most of the reviews on Amazon are positive for the cast iron ebelskiver pans. The negative reviews consist of people who say everything sticks (and I’m betting they didn’t follow the season-your-cast-iron-pan-lecture) or that the cups are too small. Some people only flip ebelskivers once – like a pancake (but in the round cups). I don’t make them like that. I can see if you did want to do that then the size of this ebelskiver pan would be too small but the way I make them, turning them often to create a fluffy ball of ebelskiver, works magically well with the cast iron pan.

Here’s another cast iron ebelskiver pan (Camp Chef brand) that looks to be a bit wider on the bottom and generally just a tad bigger than my favorites. Can you tell that I’m a fan of the cast iron variety of pans?

Recently (or fairly recently) there have been a few larger, nonstick pans come on the market. This one has pretty high reviews on Amazon and it looks to be a bit larger than the one I have (both the cup size and in diameter).

I don’t think the ebelskivers themselves need to be larger but I can see how the nonstick coating would appeal to many. The only caution I’d give is to be careful not to scratch it up as you are turning the ebelskivers with your old knitting needle (might need to use a silicone type tool here). Since I have neither seen this pan in real life nor used it, I’m not giving any of these away today but if you are in the market to buy an ebelskiver pan, your research might lead you this direction.

    It’s hard to resist Nutella but we would also try a crepe filling that we love. It has cream cheese, whipped cream and some powdered sugar all mixed together. Add strawberries and bananas or blueberries and it could give Nutella a run for its money…for a little while at least 😉

    This idea comes from an old Washington Post recipe topping for French toast…sliced bananas, ricotta sweetened with powdered sugar and almond extract, and toasted slivered almonds. It is the best!

    Growing up, my mom always made a butter syrup for these golden balls, but I would think mini scoops of ice cream with buttermilk syrup would be divine! Then I could eat them for the meal and the dessert.

    I’m Going to be trying these tomorrow morning. . I’ve got the recipe and borrowing a pan, the non-stick one.
    I was wanting to know if piping a filing into them works well?. I’m not sure of the textureof the bread. . Also we are using raisins, and just rolling them in regular sugar. . Wish me luck.. !

    I had ebelskivers for the first time over the holidays while staying at my sister’s home in Michigan. Her husband made them with marshmallows mixed in the batter and then sprinkled powered surgar on top before serving. The 5 year old, 9 year old and all the adults visiting over the holidays raved about them. We had my poor brother-in-law stuck in the kitchen most of the morning making the entire family ebelskivers. Poor guy. I think he would truly appreciate another pan and hopefully I can surprise him with it for introducing us all to ebelskivers.

  87. Hello! I have never made these but we are a big fan of beignets, pancakes, crepes, waffles, etc, so I know we would love this yummy treat too. Am I too late to enter for pan give away?     Just found your sight because of a spot on The Chew today about ebleskivers. I was looking for recipes and came upon your site. The pan giveaway had me all excited, then I saw it said the contest was closed. Then there was more which made me think you were doing the contest again…so I am confused! I would REALLY love to win one of these pans and try these…I have never had them and I am older than dirt! The possibilities are endless, but I would probably use bananas and Nutella with whipped topping on the first batch. If this contest is current…or if not now, but you do it again…please consider this as my entry! I want one of those pans!!! ( And I LOVE cast iron!!! I also know how to season it as well…so that would not be a problem. )

    We collect and do the majority of our cooking in cast iron. I’m so interested in this pan. I’m thinking my favorite topping would be raspberries and cream. (Might add a dollop of cool whip and drizzle of chocolate, or sprinkle mini chocolate chips on top).

    I had them for the first time a week ago on my 35 Anniversary weekend, and just loved them! I make a killer raspberry armaretto sauce that would be fantastic with them with homemade whipped cream and sliced almonds,YUM!!!

    I would make a simple syrup of equal parts water to sugar, add sliced peaches or sliced mango or perhaps cut up rhubarb and let it thicken slightly; add that as a topping over the ebelskivers with a light dusting of powder sugar. Can’t wait to do that.

      We make this at Christmas…usually there are no leftovers. But if you were to freeze them, you’d see they flatten out after they thaw. So you’d want to fill them with something like peanut butter & ? , or some jelly. Have heard you can buy small ones in Cosco, that have a whipped filling. For thawing: allow them to become somewhat soft, at room temp. but do not reheat. Enjoy!

    These have been a tradition in our family for forty years. I received my skeeber pan from my mother-n-law who was 1/2 Danish. She made these for her family and each child got a pan when they married. We have these at Christmas, along with link sausages and/or bacon. My family puts sausages inside along with special ($$)syrup, or peanut-butter, or butter and apple sauce or ??. Mom said whatever sounds good will work as they’ve eaten them when just about anything you can think of. They’re good for dessert or breakfast or stuff them w/ sausage for more of a meal. Can be frozen …if you have left overs. But suggest you fill them w/ some kind of filling before freezing, as they flatten when thawed. Don’t store them longer than a few months,(if someone finds them before then there still good). 🙂

    My son was a missionary in Denmark many years ago and came home with a pan and the recipe. We have loved them. He puts in half the batter then adds homemade jam or fruit then the rest of the batter. He cooks them then sprinkles them with icing sugar or whipped cream. Delicious!
