BLACK BOTTOM BANANA COCONUT CREAM PIE

Banana coconut cream pie meets a buttery coconut cookie crust + a rich chocolate ganache layer. Talk about the ultimate cream pie!

- Graham cracker crumbs - Toasted shredded coconut - Brown sugar - Salted butter - Chocolate chips - Heavy cream - Coconut milk - Egg yolks - Cornstarch - Salt - Butter

INSTRUCTIONS

STEP 1

For the crust, preheat the oven to 350 degrees F. Combine all the crust ingredients together until evenly moistened.

STEP 2

Press into the bottom and sides of a 9-inch pie plate. Bake for 8-9 minutes until very lightly golden. Remove from the oven and let cool completely.

STEP 3

For the ganache, heat the cream to a simmer in the microwave or on the stovetop. Add the chocolate chips. Let sit for 3-5 minutes until the chocolate chips are melted.

STEP 4

Stir until glossy and smooth. Spread evenly over the bottom of the cooled crust. Refrigerate until ready to assemble the rest of the pie.
