DOUBLE CHOCOLATE ZUCCHINI BROWNIES

Decadent and delicious, these velvety and rich one-bowl chocolate zucchini brownies are one of the BEST ways to use up all that zucchini!

INGREDIENTS

Persimmon

- salted butter - semisweet chocolate - cocoa powder - brown sugar - granulated sugar - vanilla extract - egg yolk - baking soda - salt - zucchini

Radish
Artichoke
Carrot

INSTRUCTIONS

STEP 1

In a microwave-safe bowl, add the butter, chocolate chips, and cocoa. Cook for one minute increments, stirring in between, until the mixture is melted and smooth

STEP 2

Add the brown sugar and white sugar; mix well. Add the vanilla and egg yolk and mix again until well-combined.

STEP 3

Stir in the baking soda and salt until well-combined.

STEP 4

Add the zucchini and stir until evenly mixed.

Add the flour and ONE CUP of the chocolate chips (or chunks) and stir until just combined (don’t overmix).
