CRANBERRY COFFEE CAKE WITH WARM VANILLA SAUCE

This cranberry coffee cake with warm vanilla sauce is a stunning dessert! Even better, it is incredibly delicious with the brown sugar pecan streusel, tart cranberries, and caramel sauce.

- Salted butter - Granulated sugar - Egg - Buttermilk - Baking soda - Salt - All-purpose flour - Fresh cranberries - Brown sugar - Pecans - Heavy cream - Vanilla extract

INSTRUCTIONS

STEP 1

For the cake: in a large mixing bowl, combine the butter, granulated sugar, egg, buttermilk, baking soda, salt and flour.

STEP 2

Mix until no dry streaks remain and dough is mostly combined. Add the cranberries and stir with a rubber spatula until evenly combined into the batter.

STEP 3

Spread the batter evenly in the prepared pan. Sprinkle evenly with the brown sugar and pecans.

STEP 4

 Bake for 45-55 minutes until the cake is set and a toothpick inserted in the center comes out clean or with moist crumbs.
