EASY SHRIMP PESTO PASTA WITH SUN-DRIED TOMATOES
This easy shrimp pesto pasta tastes better than a restaurant but is simple enough for a fast, weeknight dinner. It’s fantastic!
Prep Time: 40 Mins
– penne pasta – olive oil – shrimp peeled, deveined and tails removed – heavy cream – chicken broth – chopped sun-dried tomatoes, drained – basil pesto – Freshly grated Parmesan cheese
Cook pasta in lightly salted boiling water until al dente. Drain. Set aside.
In a medium saucepan, Heat olive oil over medium heat until hot and rippling. Add the shrimp and season lightly with salt and pepper.
Add cream, broth, and sun-dried tomatoes and simmer for 2-3 minutes until the shrimp are cooked through.
Stir in pasta and pesto and toss until evenly combined.
Serve immediately with freshly grated Parmesan cheese.
