Hi Mel! I just came across your website while looking for healthy recipes for my family. We are all “nutritionally challenged” and I have a hard time figuring out what to cook. I am attempting to make a lifestyle change for my family, as our pediatrician just told us (in a not so direct way) that our daughter is starting to gain a bit too much weight. She is 7 and a VERY picky eater. She lives on pasta, chicken nuggets, french fries and other junk. If something is healthy, it is pretty much guaranteed that she won’t eat it. We argue and fight over food every day – it is a huge pain point in our household. In addition, her school is very small and does not offer hot lunch, or a way to heat/refrigerate what we send. We have to put an ice pack in her lunch bag to keep her food cold. This severely limits what we can send for lunch as thermoses are not allowed and there is no way to keep warm food warm. I am completely lost! Can you PLEASE help me get my family on the right track? I don’t want my daughter struggling with weight issues because I can’t figure out how to overcome these obstacles.
