My Mom’s Homestyle Stew

This was the perfect Christmas Day dinner – no fuss but delicious as all get out. We have our big festive dinner on Christmas Eve so I wanted something for Christmas Day that was still fulfilling but not a lot of work. This was it! My mom’s stew. She’s been making it for years, ever since I can remember. I’ve made it several times for my family and I think I’ve decided after today it will be our annual Christmas Day dinner…unless we somehow move to Texas or Arizona and it is 90 degrees on Christmas Day. Then we’ll just grill hamburgers.

Trade Secrets:
This makes a VERY hearty and thick stew. If you want it a bit “soupier” add another can of water or a cup of beef broth or stock. Also, I use red potatoes and leave the skin on.

Mom’s Stew

INGREDIENTS:
1 can minestrone soup
1 can tomato soup
1 can water
1 to 1 1/2 pounds stew meat
1 onion, chopped
3-4 carrots, thickly sliced
3-4 potatoes, cut into chunks
Salt and pepper to taste

DIRECTIONS:
Combine all in a crockpot. Cook on low for 8-10 hours or high 4-5 hours. Serves 4-6.

Oh, this looks delicious. I especially love making family recipes. I am definitely going to try this out. I don’t have a lot of beef stew recipes, so I’m excited about this….

I finally got around to making this! So so so delicious and so simple too! I made it with your french rolls. This will definately be one of our favorites for the colder months.

Did I ever tell you that I made this the day I got home from the hospital with Eliza? I had the ingredients in the fridge already from before I went into labor, so I just spent 20 minutes when I got home and put it together. And at dinner time I had a delicious supper ready. A nice meal always raises my spirits, so I knew the investment when I got home would be well worth it. :) It was Fabulous!!!

Hi Laura – I use whatever brand is cheapest. I’ve used Campbells before and I’ve also used the generic brand and either works great!

So do you use campbells condensed minestrone to make this? I want to give it a try.

Amy – I don’t brown the stew meat but you definitely could and it would add great flavor!

Yum. this is cooking up in the crock pot right now and will be done in about an hour. The place smells amazing! CAn’t wait!!!

Mel, you could move to Texas for the winters and go back to W for the summers. It was 82 degrees in North Fort Worth today!

Thanks for sharing some wonderful recipes! Just tried this soup last night with my family…everyone loved it. Perfect dinner to a cold rainy day!!
