For Easter dinner, my sister-in-law, Angela, brought the most delicious salad and dressing that I am excited to tell you about. The salad itself was made up of lettuce, black beans, corn, chopped cilantro and tomatoes. But the dressing was the real star. It is a creamy, cilantro, lime dressing that is fantastic. It was delicious on the black bean and corn salad, but it would be equally delicious on many other green salads, as well. It was so tasty that I was licking my plate afterwards (seriously…although I tried to do it when no one was looking). I can’t wait to make it again! Thanks, Angela!
Ingredients
- 3 fresh tomatillos, quartered
- 1 package dry Ranch buttermilk dressing
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 2/3 cup buttermilk
- 1 cup fresh cilantro
- 2 cloves garlic, crushed
- juice of 1 lime
Directions
- Combine all ingredients in a blender and process until smooth. Refrigerate at least one hour prior to serving.

I have seen this recipe floating around the blog-o-sphere and have been reluctant to try it; fearing it wouldn’t compare to my beloved Cafe Rio dressing. But, maybe I will give it a go- since you were licking your plate and all!

melanie c., Holly and Jodee – I’m not sure how it compares to Cafe Rio’s dressing because I don’t eat there often. So don’t get your hopes up too high, that way you won’t be disappointed – I’m sure it isn’t exactly the same but knockoff’s rarely are, right? If anyone tries them and tweaks the recipe to be more like Cafe Rio’s, let me know.Kendra, that recipe looks great. I’ll have to remember it for next time I need a creamy dressing.

This recipe looks great and I will be trying it. If you want a more “Cafe Rio” dressing, you are going to have to add a jalepeno to this.

I thought is sounded alot like Cafe Rio’s too – which would be great! I’m not much about salad, but since this has more than just lettuce to it, I’m sure it is tasty. Yet another of your recipes I’m bookmarking!
At my daughter’s recommendation I made this salad for a pot luck at work this week. The theme was Mexican food and I wanted something that would be a compliment to the spicy foods. What a hit!! There was nothing left of the salad by the time work was over. Everyone wanted the recipe and I think you will have a few new blog watchers too.Thanks for a great recipe.
