Oatmeal Coconut Chewies
These oatmeal coconut chewies are buttery, soft, chewy, filled with coconut and oatmeal…and that all adds up to being some of the best cookies ever.
These are my new favorite cookie. There, I said it. And I hope this cookie and this cookie and this cookie aren’t jealous since I’ve declared them all to be my favorite in days gone past.
This new love is my Aunt Laurie’s recipe (sister to the famed Aunt Marilyn), sent to me by Stacey, my cousin, Laurie’s daughter. Following?
Anyhow, Cousin Stacey and Aunt Laurie instantly catapulted to favorite-extended-family status after I made this recipe.
And then I instantly demoted them based on the number of calories I consumed after making and devouring these cookies twice in one week.
These cookies are buttery, soft, chewy, filled with coconut and oatmeal…and that all adds up to being some of the best cookies ever.
Plus, the baked cookies freeze wonderfully. Not that they’ll make it that far.

Oatmeal Coconut Chewies
Ingredients
- 1 cup (212 g) granulated sugar
- 1 cup (212 g) brown sugar
- 2 large eggs
- 1 cup (227 g) salted butter, softened to cool room temperature
- 2 teaspoons vanilla
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ½ teaspoon salt
- 2 ½ cups (355 g) flour
- 1 cup (85 g) shredded sweetened coconut
- 1 cup (100 g) quick oats
Instructions
- Preheat the oven to 350 degrees. In a large bowl cream together the sugar, eggs, butter and vanilla until light and fluffy.
- Add the dry ingredients and mix until combined. Drop by tablespoonfuls onto a greased or lined (silpat or parchment) baking sheet.
- Bake at 350 degrees for 9-11 minutes, until the cookies are set but not overly browned (bake a few minutes longer for a crispier version).

OK, now THESE are the BOMB!!!! Holy smokes….so so so good! And just because I felt the oatmeal was starting to make these cookies tilt towards the “healthly” column (I used old-fashioned oats, not quick cooking oats), I had to add a bit more fat grams by adding walnuts. Healthy fat, though, right? Who cares…..chew chew chew….yum yum yum!!!!

These couldn’t be easier to throw together and the flavor is fantastic. I love all things coconut and oatmeal, so this combination made my little heart go pitter pat. Even my husband who is pretty much of the “if-it-doesn’t-have-chocolate-in-it-it’s-not-a-cookie” mindset said these were really good. Then he asked me if I made the recipe up. Then I laughed. Then I said I got the recipe from the same place I get 99% of my recipes. And then I froze the rest of the batch so I could hide them from my kids. Cuz I’m a good mom like that.

They’re great chewy and they’re even great if you get distracted with three kids under 5 and they end up a little crispy!!! Made them for a church function today and they were gobbled down quickly! Just made these today! For some reason I thought the recipe called for lime, so I bought one specifically to make these cookies. Since I had it, I added a little bit of lime juice and zest to these! They are absolutely delish! I can see why they are your favorite! Mine definitely won’t make it to the freezer, but maybe next time I’ll make a double batch and try to freeze them. Melanie– These were simple to make and oh- so-yummy! I made them on the fly for a thank you gift and then thought– we had better taste these before we give them away and they received three thumbs up from the taste testers (me included!) I added raisins to half of the batch and liked them that way– maybe macadamia nuts next time. . . Great cookie! thanks.

Hi! These cookies were delish! I froze most of them to serve at our bbq this w/e. Should I take them out the morning of and just keep them in a tupperware? How did you defrost? I want them to taste fresh!

Thanks, Lorie – so glad you liked the cookies! When I am ready to use cookies from the freezer, I take them out 4-5 hours before serving and keep them in the tupperware or ziploc bag they were frozen in and let them come to room temperature while they sit, covered, on the counter.

Kaitlyn – I’m sure you could, although the texture may be a bit different. If I were you, I’d grind the regular oats up a bit in a blender or food processor and then use them.
These cookies were so tasty and definetely pretty. They baked perfectly and looked good enough I could send them across the country for a birthday gift. I must agree that the dough was some of the best!

Made these yesterday and oh boy were they fantastic. They are just like my favorite ‘secret’ recipe oatmeal cookies, only better. Because the secret is the fact that they’re a Betty Crocker pouch mix. And I love the coconut! I’ve tried to find something from scratch to replace ‘the package’, but lost hope after 5 oatmeal cookie recipes fell short and I gained 8 (more or less) pounds sampling.

DELICIOUS!!! I made these today and they’re amazing. The texture of these cookies are perfect. Too bad my husband hates coconut and I’ll be forced to eat the whole batch. This may be my new favorite cookie. Next time I’ll think I’ll substitute the coconut for chocolate chips and see how they turn out. Another great recipe from you!!

I made these. They are good. I added chocolate chips to half of them, and they turned out very tasty both ways.
Oh, and I made them with unsweetened coconut (because I have it on hand). I wasn’t missing any extra sweetness, so I think it’s safe to say that both will do.

Yum. Yum. Yum. If you’re a cookie dough lover (like me), you may not want to try the dough. Because it’s possible very few cookies will make it to the oven.

Those look so yummy. I have a big soft spot in my heart for oatmeal cookies (and a couple on my derriere as well).
I’ve used fresh coconut for baking and the sweetness isn’t the only place there is a difference. Sweetened shredded coconut is also dehydrated a little, while fresh is not. The extra moisture in the coconut will change the texture of the cookies. You can either shred, sweeten with a sprinkle of sugar and toast it very lightly (as in little color) to dry it out or use it wet and add a little more flour. Adding more flour with ultimately make the cookies less chewy and possibly cakier.

i can see these becoming my favorite cookies as well, and that’s based solely on these pictures and your description of them. i’m thinking perhaps adding some butterscotch chips might be the perfect touch for me. 🙂

Jeni and Melissa – I am an absolutely novice with fresh coconut so I can’t give you any direction on subbing it for the already shredded. I’m guessing it would work but would be less sweet than using the shredded sweetened variety. Let me know if either of you try it!
