Chicken Tortellini Bake
This chicken tortellini bake is quick and easy, and better yet can be made ahead of time for a fast weeknight meal.
Let’s just state the plain facts. It is nearly impossible for me to take an appealing picture of a casserole-type meal, but please take my word for it: this meal is fantastic.
My cousin Camille (who incidentally was my post-college roommate for a few years and who has always been a fantastic cook) sent me this recipe a few weeks ago.
I finally tried it and based on my husband mumbling “this is so good” through mouthfuls of food, I’d say it was a big hit at our house.
My kids love noodles in all their forms and the cheese-filled tortellini was out of the norm (hence the excitement on their part) of our usual spaghetti and macaroni and cheese.
I made this meal a few hours ahead of time and refrigerated it, which made dinnertime a breeze. Thanks, Camille!
What to Serve With This
A steamed veggie (or for something fancier this Creamy Confetti Corn with Bacon)
Divine Breadsticks or a really, great dinner roll like these Fluffy Whole Wheat Rolls
Fresh, seasonal fruit
Chicken Tortellini Bake
Ingredients
- 1 (16-ounce) package cheese tortellini (see note)
- 1 tablespoon oil
- 2 cups boneless skinless chicken breasts, cut up into bite size pieces
- 3 green onions finely chopped, white and green parts
- 2 tablespoons flour
- 1 cup chicken broth
- 8 ounces sliced fresh mushrooms
- ¾ cup sour cream, I used reduced fat with good results
- 2 cups shredded Monterey jack cheese (see note)
Instructions
- Bring a large pot of water to boil and cook tortellini for 2-3 minutes (this is if you use the “fresh” tortellini from the refrigerated section – and to be completely honest, next time I’m going to try not boiling it at all and letting it cook while it bakes in the oven). Drain and set aside.
- Heat the oil in a large non-stick skillet over medium heat. Brown the chicken for 1-2 minutes and add the fresh mushrooms and green onions, cooking until chicken is done and mushrooms are golden brown. Sprinkle flour over mixture and stir to combine. Cook for 1-2 minutes. Add chicken broth and stir until thickened. Mix in sour cream until mixture is creamy and slightly thickened.
- Spray a 9X13 pan with cooking spray. Pour tortellini in bottom of 9X13 pan. Sprinkle half the cheese over tortellini. Put cooked chicken/sauce mixture on top and sprinkle remaining cheese over the top.
- Bake covered with tin foil at 350 for 30 minutes, uncover and bake for additional 15 minutes until bubbly and golden brown around the edges.

As for this dish, I would be hesitant to freeze it but since I haven’t tried it, I don’t know for sure. Also, the leftovers are great reheated at 50% power in the microwave. I hope you liked it!

I wanted to let you know that I made this recipe tonight and it was awesome! My 2 and 4 year old loved it, too! I used frozen chicken fajita meat, so that gave it a good flavor, too.

This looked so yummy I had to try it tonight. I am not a fan of the “soggy noodle” so I did not boil the tortellini. But I was in such a hurry I neglected to add some extra liquid to the sauce. It was a little dry & crunchy. Still very good & my family said it was a keeper. Next time I’ll just be sure to add that extra liquid, or boil the tortellini for just a minute to make them moist. I will certainly be adding this to my rotation…great to take to others as well!
I also made the Chocolate Chip Cake & my family is gobbling it up as we speak! LOVE it!

I made this without precooking the noodles (refrigerated variety from Costco that had a 6 minute cook time). I added 1 extra cup of chicken broth when I made the sauce and although it was runny when I poured it over, by the time it baked the noodles and sauce were perfect.
As far as the mushroom omission- my kids are not fans, so I split my casserole into a bigger pan, and a little pan, and just ran a little sauce for the “Kids pan” through a strainer and poured the remainder on the larger casserole. The mushrooms gave a nice flavor, so I don’t know that you’d want to leave them out altogether.
we had this last night and oh my goodness. the green onions and cheese with the chicken makes it taste like chicken bakes from costco! lol…sooo good. all my family was happy and my 2.5 year old even ate alllll of his:)

I made this tonight for dinner. Instead of cheese tortellini, I made it with Buittoni’s Chicken and Procuitto. It was pretty tasty. I also didn’t cook the noodles, but should have because of the dehydrated meat factor (it was still good, but just a little texturally off). Now, reading through the comments, I see that I forgot the onions which would have made a tasty addition. Oh, and I added bacon. This recipe, to me, kind of screamed for bacon.
Didn’t mean to completely change the recipe, but I think it was really good bones and allowed for additions and absent-minded deletions. Thanks!
This was a fantastic recipe! and super easy too! I am going to try freezing disposable pans of it without the mushrooms so then all I need to do for a quick dinner is saute mushrooms and put them on top after baking! I hope it works! I tried two of your recipe’s yesterday and OH MY GOODNESS!! We had the waffles with cheese- best waffle’s ever! My husband and I decided that this recipe is “the one” after trying a ton of different waffle recipes. The cheese made them that much better!! We will always make them with the cheese now!
