S’Mores Chocolate Chip Cookies
Soft and chewy, the classic flavors of an already delicious chocolate chip cookie are emboldened with the delectable taste of graham crackers and marshmallows in these s’mores chocolate chip cookies.
Your favorite classic chocolate chip cookie got a yummy facelift with this s’mores version.

S’Mores Chocolate Chip Cookie Dough
The dough for these incredible cookies starts with your basic cookie dough ingredients:
- butter
- brown sugar + granulated sugar (there’s a higher brown sugar to granulated sugar ratio in this recipe than a “normal” chocolate chip cookie)
- eggs + vanilla
The recipe changes gears just a bit with the dry ingredients because along with flour, we’re adding crushed graham cracker crumbs.
I highly encourage the crushing of your own graham crackers here versus using storebought graham cracker crumbs. The storebought variety are crushed very finely, reminiscent of sawdust, and might mess with the overall texture of the cookie.
I usually use a blender for quick work of getting the rectangle grahams into messy little crumbs.
Info on the Marshmallow Bits
These cookies become delightful s’mores cookies, in part, because of the marshmallow bits that are added with the chocolate chips.
For this recipe, your average mini marshmallows will not work! They’ll melt into huge craters and become a puddly, burned mess ruining one of life’s most perfect cookies. Trust me, I tried it.
Instead, you need dehydrated marshmallow bits.
Local Options: I have seen them in Walmart and even my local grocery store located right by the other marshmallows or by the hot chocolate. Reader reports tell me that Target is a great place to find them, as well. They are also often sold in bulk at US Foods Chef’s Store (used to be called Cash and Carry).
Online Options: I almost always order them online because I never want to run out (yes, I might be on the subscribe and save plan). I’ve bought this brand and this brand – aff. links from Amazon.
The dehydrated marshmallow bits are crunchy and sweet, and when baked into a graham cracker, chocolate chip-studded cookie dough, they become soft, chewy little bits of heaven.
A Note About Cookies That Flatten While Baking
These cookies are on the soft and chewy, slightly thinner side of the cookie spectrum.
If you’re cookies are spreading or flattening while baking or you want a slightly thicker/puffier cookie, try:
- Make sure the butter is at room temperature and NOT overly warm or melty when making the cookie dough.
- Use cold eggs.
- Add 2-4 tablespoons more flour to the cookie dough.
- Make sure the graham cracker crumbs are in small pieces (not larger chunks).
- Bake at 375 degrees F or use convection bake (at 325 or 350 degrees F) if you have that setting on your oven.
Conversely, if your cookies aren’t spreading enough, try baking at 325 degrees F and/or cutting down on the flour by 1/4 cup.

These soft and chewy s’mores chocolate chip cookies have skyrocketed to the top of my favorite cookies list. I make them more often than I do regular chocolate chip cookies.

S’Mores Chocolate Chip Cookies
Ingredients
- ¾ cup (170 g) salted butter, softened
- 1 cup (212 g) packed light or dark brown sugar
- ⅓ cup (71 g) granulated sugar
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ¾ cups (249 g) all-purpose flour (see note)
- 1 cup (100 g) graham cracker crumbs (about 9 rectangle crackers crushed)
- 2 cups (340 g) chocolate chips or chunks
- 1 cup (50 g) miniature marshmallow bits (see note)
Instructions
- Preheat the oven to 350 degrees F. Line baking sheets with parchment paper. Set aside.
- Using an electric stand mixer fitted with the paddle attachment or in a bowl with a handheld electric mixer, add the butter, brown sugar, granulated sugar, baking soda, and salt. Mix together until very light and creamy, 2-3 minutes, scraping down the sides of the bowl as needed.
- Add the eggs and vanilla and mix until evenly combined.
- Add the flour and graham cracker crumbs and mix until just barely combined; a few dry streaks are ok.
- Add the chocolate chips or chunks and marshmallow bits and mix until incorporated.
- Scoop the dough by heaping tablespoons onto the prepared baking sheets, spacing at least 2-inches apart.. I like to roll the mounds of dough so they are smooth, but you don’t have to be obsessive like me.
- Bake for 10-12 minutes until just golden on the edges and a little crackly on top. Let the cookies sit for a few minutes on the baking sheet before removing to a wire rack to cool completely.

I make a LOT of Mel’s recipes (1 hr breadsticks last night and white chicken chili tomorrow! ) Every recipe has been nothing less than amazing (thank you Mel!) So when I decided to make/take these cookies to a housewarming party, I didn’t think about needing to first do a trial run. I happily scrambled to secure the ingredients (wow only 1 store 30 min away sold these marshmallows!) Well I don’t post reviews, but if it helps anyone avoid my morning scramble and panic I am here to recommend a trial run before you gift these cookies. They were flat and overcooked even though I baked them for the minimum recommended time. I saw the flat cookie note to increase the temp to 375 so I tried that and shortened the bake and still flat but more overcooked. Definitely recommend a trial run if the cookies are leaving home.

if you need an incredible twist, try making these with cinnamon graham crackers instead of plain, and 2 cups of white chocolate chips instead of chocolate chips and marshmallows. AMAZING.

These cookies were good, but even making them with semisweet chocolate chips (instead of milk chocolate), they were too sweet for me. I probably won’t make them again.

1 and 1/8 c butter (255 g)
318 g brown sugar
106 g white sugar
1.5 tsp soda
3/4 tsp salt
3 eggs
1.5 tsp vanilla
374 g flour (heaped to be actually 457g)
150 g graham cracker
510 g chocolate chips
75 g mallows
I bought a 1 lb jug of the marshmallow bits and I’m not a bit sad that I will be making at least 9 batches of these cookies to use the bits up! All my cookies have been better since I started using the weight for measuring instead of my ancient dented metal cups too.
I found this recipe earlier this year and I don’t Ben know how many times I’ve made it since! We’ve gone through bags and bags of the dehydrated marshmallows because I’ve made these so much! They’ve been a huge hit everywhere I’ve taken them and I always get asked for the recipe. I made them for my family at our family reunion/dads 80th birthday party and the first doubled batch everyone ate the dough and I only cooked like 1 pan, so I made another doubled batch and everyone loved them so much! Both the dough and the cooked cookies, haha! Thank you so much Mel for being my go to recipe friend (I feel like we’re friends because I use your recipes so often and am always saying oh it’s Mel’s recipe!) thank you for this cookie recipe that is now a family favorite!
Finally got around to making these and man, they were a hit! So yummy. Mine did not turn out as pretty, not sure if my dough was too warm or I was multitasking too much and wasn’t watching the time as much, they spread a bit, but, even the ones I overcooked were delicious and the kids loved them, pretty or not. Thanks for another hit cookie. My only issue is not knowing which one of yours to make since they’re all so delicious!!

I am local to you. I can not find the marshmallows for this recipe anywhere. I have bought Them before a long time ago for a hot chocolate bar but now can’t find them. Can you give me any store ideas where you have found them? I have tried Albertson’s, Winco and ridleys. Appreciate your help.
Hi Sherry – often, they don’t carry them until the winter. I’ve had to buy them on Amazon throughout the year because it is hard to find them locally.
I found them at Target and could even get them shipped to me. Walmart was out of stock. Hope you’re able to find them!

Love these so so much! Nice crisp with the graham crackers but a gooey chewiness with the marshmallows. Came out fantastic! I appreciate the notes and others’ comments on how to make them a little less flat- I like thicker cookies so I did the same adjustments as others:
– chilled dough for an hour or two
– oven up to 375 (dont have convection option)
– extra flour. I added three very heaping TBS extra, came out to about 305 g total
It worked a little too well and my cookies didn’t spread much. So, I flattened the dough balls just a little before cooking the next time (and fixed the others by pressing lightly on them with a spatula after they had cooked). Maybe that cancelled out my adjustments (haha) but they turned out great!!

Mine always go super flat, but taste so good! I like a little more puff to my cookies though. So I added a few extra tablespoons of flour and chilled the dough after forming the dough balls and then baked. They turned out amazing and were a HUGE hit! Thanks Mel! I can always depend on you for delicious and crowd pleasing recipes.
I made these cookies today. Recipe calls for 3/4 cup of butter. Didn’t want to be bothered with measuring butter. Do I dare double a batch of cookies I’ve never made before so I can use 3 cubes of butter and not measure or guess? Who’s recipe is it? Mel’s! Yes, I doubled it! Delicious! Go big or go home!
