Rocky Mountain Cookies {Sugar Rush #11}

Such a delightfully simple cookie. But oh baby, are these ever worthy to grace the posts of Sugar Rush.

Think of a chewy, soft oatmeal chocolate chip cookie with light and crunchy Rice Krispies bubbling through every bite. I love the texture of these cookies. Thick and soft, crunchy and chewy…and so very simple to throw together.

They won’t last long, I can promise you that.

INGREDIENTS:
1 cup granulated sugar
1 cup packed light brown sugar
1 cup butter, softened to room temperature
2 large eggs
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
½ teaspoon baking powder
2 cups old-fashioned oats
2 cups crisp rice cereal (like Rice Krispies)
2 cups chocolate chips

DIRECTIONS:
Preheat the oven to 350 degrees.

In a large bowl, cream together the sugars and butter until light and fluffy. Add the eggs and vanilla and beat well. Add the flour, baking soda, salt and baking powder to the butter/sugar mixture. Mix. Fold in oats, cereal and chips. Drop tablespoonfuls of the cookie dough onto lightly greased or lined (with parchment or silicone liner) baking sheets. Bake for 10-12 minutes until the cookies are lightly golden brown but still soft.

A new cookie always gets my attention. My two year old loves to help dump things into the mixing bowl, so he would love to help with these! I have learned beyond helping with that part there isn’t much I can actually consider to be help from him. But he loves to cook, well bake really.

I have a recipe just like this I was going to post over on my blog soon, it’s my favorite cookie! But mine has 1 tsp salt (which I really like) 1 tsp cinnamon and only 1 cup of oatmeal, they are thinner I think than yours, and crunchy! That brown sugar and krispies along with the cinnamon make them addictive!

I think I need to make a batch just for me!

I made these cookies tonight and they have really good flavor. I love the crunch of the rice krispies, however; my cookie dough was really crumbly and the second batch would not stick together. I added some milk to the dough and they turned out much better. Did I do something wrong when I mixed the dough together?

Janette – was your butter soft enough? Hmmm…I’m not sure what would have gone wrong but I’m glad that you were able to rescue the dough with the milk!

Kensi – I’m not sure since I haven’t tried it…I think it’s worth a try. I’d probably use a 9X13-inch pan and bake them for about 18 minutes to start with (check often!).

I’ve never had Rice Krispies in a cookie…I bet they are fabulous! I can’t wait to try this recipe! :-)

We have a recipe like this at our house too! The recipe calls for either rice krispies or corn flakes. I personally prefer the corn flakes. But they are my FAVORITE cookies! YUM

Very good cookie! Made a trial batch to see if they would be added to the annual cookie trays (I add a new wildcard recipe each year) and they are a keeper! Will be making many, many batches of these this week!

I am planning on giving out cookie dough as a gift this year, (gotta love the line, ” ’cause everyone can use come dough this time of year”). Does the dough freeze well to cook later? Looks Yummy!

I am about to make these and found cinnamon chips in my pantry….I wonder how those would taste instead of the chocolate chips? I bake maybe twice a year so I dont know if I want to risk it!

I made them, and I liked them. I can’t say I loved them, but they were all right. They were better when cooled completely. I was surprised that I got not just texture from the rice crispies (which I liked) but also a little flavor (the thing that kept me from loving them.)

So, the tip on greasing the pan or using parchment, that’s a good tip. Totally.

I didnt go for the cinnamon chip variation, I was too chicken, but I really loved these cookies. They were really light and I felt less guilty because of the oatmeal and the cereal dispersed some of the butter and sugar so you ate less of the bad stuff…..least that is what I told myself when I ate about 2 dozen myself :) When I make these again I will for sure take them out just as they get slightly brown, some where a little too crisp, but if you pop them in the microwave for 10 sec. they get nice and chewy! You cant waste a single cookie, when I finally bake something.

I never expected the extra crunch in this cookie to be so good! I added 1 tsp of cinnamon because I love oatmeal and cinnamon together. Yet again, another delightful recipe! :)

5 stars! My son said these are his new favorite cookie. I followed Kara’s suggestion of increasing the salt and adding cinnamon – the cinnamon really adds a special touch, and the rice krispies are a such a fun surprise. Can’t wait to try more of your recipes!

I added Heath chips since I was all out of chocolate chips and they were delicious.
The dry cookie trouble above was probably because of not softened butter. My dough was the same way, but I just formed them into little doughballs with my hands. I’m always too impatient to wait for the butter to soften. =) The kitchen aid does pretty well at breaking all the butter up evenly.
I liked hearing the famous snap, crackle, and pop as I pulled them out of the oven I love this recipe!

Hi there,

Just made these cookies today for the first time… followed the directions exactly… they taste pretty good, but don’t look like yours in the picture! :-( Any ideas on why not? I live in Utah, and I just have a regular oven (not convection). The cookies are flat and kind of “lacy” looking and fall apart easily. :-( What do you think?

BTW, LOVE your website; I get lots of recipes from here. Keep up the good work!

Kellie – It’s hard to know exactly what went wrong but my guess is that it is something related to altitude – when I used to live in Utah, I often had to add a couple tablespoons of extra flour if my cookies were turning out flat like you said yours were. It could also be related to overly soft butter – that can make cookies bake up flat, too. Hope that helps a little!

Made these tonight. Seemed like they needed a longer cooking time in my oven. But, my husband raved about them, so that’s what’s important. Just wish I could try all these wonderful recipes of yours. Unfortunately they’re not on my diet list. Do you have any “healthy” recipes? :-)

I made these yesterday- I had about half a package of Heath toffee chips so added them also. I like to make balls instead of drop cookies so your recipe made 4 and a half dozen golf sized balls that baked perfectly. I just tasted a couple of crumbs but I can tell they are good. I’m off to volunteering soon and they will be eaten quickly I am sure. Thanks!
