Quick and Easy Egg Roll Skillet Meal
Get your egg roll fix with this delicious egg roll skillet meal! All the tasty flavors of an egg roll…just a heck of a lot easier (and a lot healthier, too!).
Oh my goodness, this unassuming looking meal is one of the yummiest things to come out of my kitchen all year.

I was literally hoping and pleading in my heart that no one would see the one little helping of leftovers I shoved to the back of the refrigerator after dinner was over. Thankfully my hiding spot was golden, and Tuesday saw me enjoying every last bite in that tupperware dish.
If you love the classic flavors of egg rolls, I think you’re going to love this healthier take on the concept. But even if you’ve never been an egg roll fan, there’s so much to love about this one skillet meal.
Loaded with lean ground meat (you can use chicken or turkey)…and then double loaded with vegetables (you could even add more!), the simple flavors manage to explode into something unbelievably tasty.
There are a lot of variables in this simple egg roll skillet meal that you could play around with. I took my favorite flavor components from this best-ever egg roll recipe, but if you don’t have oyster sauce on hand, you could try subbing in extra soy sauce or hoisin sauce or even a mild BBQ sauce that has a flavor profile you already like.
Using a bag of preshredded coleslaw mix makes this already simple recipe even easier, but you could just as easily shred a head of cabbage with your own little hands and grate in some carrots, as well.
Because this recipe is a no-frills kind of skillet meal, I think there are a few bonuses that take it from plain Jane to straight up amazing.
First, the crunch factor: adding a toss of crispy chow mein noodles or fried wonton strips on top creates a contrast that is texturally appealing…as well as being delightfully yummy. You could use chopped peanuts or cashews in place of the chow mein noodles, too.
Second, adding a tangy drizzle of sauce on top gives just the right amount of flavor punch to compliment the mild flavors in the egg roll mixture. Some of us in the family went straight for the sweet and sour sauce…and those of us with an out of control sweet chili sauce problem beelined it for the enormo bottle of sweet Thai chili sauce. {Both of these sauces are pretty easily found in the Asian foods section of most grocery stores.}
A little goes along way with strong-flavored sauces like the two mentioned above, but they do add something kind of special to the humble lineup of ground meat and vegetables. Serving this egg roll skillet meal alongside brown rice (or white rice) would make it even heartier. The few times we’ve made it, I’ve skipped the rice as a side dish and we’ve piled the egg roll mixture in shallow bowls with naan (Costco or homemade) alongside for scooping.
Dinner is literally 30 minutes or less away with this fantastic skillet meal. I hope you love it as much as we do! And may the leftovers that you stash, stay stashed until you require them. 🙂
Quick and Easy Egg Roll Skillet Meal {30-Minute Meal}
Ingredients
- 1 tablespoon olive oil
- 1 medium yellow or white onion, diced (about 1 cup)
- 3 cloves garlic, finely minced
- 1 tablespoon finely chopped or grated fresh ginger, I usually use ginger paste – (see note)
- 1 ½ to 2 pounds lean ground turkey or chicken
- 4 large eggs, lightly whisked
- 1 (14-ounce) package coleslaw mix, or about 5 cups shredded cabbage/carrots
- 1 tablespoon toasted sesame oil
- 1 tablespoon soy sauce
- 2 tablespoons oyster sauce (see note)
- Chopped fresh cilantro, for serving
- Crispy chow mein noodles or fried wontons, for serving
- Sweet and sour sauce or sweet Thai chili sauce, for serving
- Hot, cooked rice, for serving (optional)
Instructions
- In a large 12-inch nonstick skillet heat the oil over medium heat until hot and rippling. Add the chopped onions and cook for 2-3 minutes until they start to soften. Add the garlic and ginger, and cook for another minute or so, stirring constantly.
- Add the ground meat and cook, breaking the meat into small pieces, until the meat is no longer pink and it is cooked through. Drain any excess grease.
- Over medium heat, scoot the meat to the edges of the pan and pour the whisked eggs into the center of the pan. Sprinkle with a small pinch of salt. Let the eggs cook until starting to set on the bottom; stir until scrambled. Mix the eggs and meat together. Add the coleslaw mix and cook, stirring often, for 2-3 minutes until the cabbage cooks and wilts slightly (cook longer for softer cabbage).
- Stir in the sesame oil, soy sauce, and oyster sauce. Cook for 1-2 minutes. Add additional salt and pepper (or soy sauce) to taste, if needed. Sprinkle fresh cilantro over the top. Serve the egg roll skillet over hot, cooked rice (optional) and drizzle with sweet and sour sauce or sweet Thai chili sauce. Add chow mein noodles or fried wontons for crunch.

Can’t believe I haven’t written a review for this one. I made it right after you first posted it (I saw it on IG). I fibbed to my kids and said it was “stir fry” because I knew they’d balk at the title and refuse to try it (or some of them would in the 10 and under set). It has become a family favorite—-requested multiple times for a birthday meal and one of the first dinners our college aged son wanted when he got back for break. Made this exactly as written and served with sweet chili sauce and homemade sweet and sour sauce. Huge hit. HUGE. With entire family. Comes together lickety split, is relatively healthy, delicious and filling. (Don’t leave off the crispy wonton strips and chow mein noodles!)

It was good! To mine I added a touch of hoisen for some extra saucy-ness, a splash of rice vinegar, and a couple squirts of siracha!
I forgot to say that this is the best egg roll in a bowl we have tried!! It is amazing with soy sauce or the Golden Mountain Seasoning!!!

Have you tried Golden Mountain seasoning/sauce? It’s similar to soy sauce but has another level of yummy flavor to it! I’ve only seen it at Asian grocery stores. I use it in the Thai dishes I cook and love it!
My other recipes for this didn’t include eggs….and I LOVE eggs in Asian dishes, especially those with tomato. I don’t know why it never occurred to me to just add them! Duh!! This recipe is wonderful with the eggs! I often add a couple of sticks of celery thinly sliced with a mandolin to egg roll skillets, too.
For people with allergies or who feel faint at the very idea of consuming anything with oysters—there are vegetarian/vegan faux oyster sauces made from mushrooms.

We had this for dinner tonight and I wanted to report back on some substitutions I made. I used impossible meat to make it vegetarian, which was still so yummy and I subbed purple cabbage for the coleslaw because that’s what I had, so I went for it. It tasted great still, but apparently purple cabbage turns scrambled eggs turquoise. Just fyi. It made for a more colorful meal! Thanks Mel!

So yummy! We used sausage for the meat because my family is Filipino and thats what they use in Filipino egg rolls. It was delicious. I also used hoisin sauce because I had that on hand. My family loved it and my 9 year old requested we have it more often. Thank you for another delicious recipe.
Love this recipe! I don’t like using oyster sauce so I usually substitute part soy sauce part hoisin sauce as recommended but, the last time I made this I could only find cilantro lime hoisin sauce and I am never going back to plain hoisin sauce again for this recipe! One of my favorite meals! You can use any kind of ground meat, I usually like pork best but tonight it will be beef. I always add a can of chopped up water chestnuts for the crunch factor. A great way to use up bits of veggies in your fridge too!

I’m trying to work on using ingredients I already have. I don’t have ground chicken, but I do have boneless skinless chicken thighs and chicken breasts in my freezer. Do you think I could cut one of those in chunks and pulse in my food processor or would this be a better recipe to make after my next grocery stock up?
Yes, I think you could do that – or just cut the chicken into really small pieces and use it that way (vs grinding it up)
You could also use ground pork or breakfast sausage.
The only mistake I made with this recipe was not doubling it!! My boys (ages 13, 10 & 5) absolutely devoured it, leaving only a single serving for my husband and me. So quick and easy and delicious!

This was a hit at our house tonight! We added celery, broccoli and cauliflower with the onions at the beginning, used pork (didn’t have ground so cut up some boneless country style ribs into bite sized pieces like my mom used to do when she made egg rolls), and left out the eggs (mostly because I forgot them). We served it over rice AND used naan to scoop it up (double win!). So much yum!! Thank you for this idea – I love egg rolls but usually don’t want to fry up a batch, but this gives all the flavor and is so easy!
Very good! We used lean ground beef and omitted the eggs. I have made recipes similar to this one in the past but this one is special due to the very clever addition of the wonton strips and the drizzle sauce. Those two ingredients really elevate the dish. The kids and I used duck sauce and my husband went for the sweet Thai chili sauce.
Another hit, Mel! Thank you! I halved it because I wasn’t sure my picky eaters would like it. They did (hallelujah! vegetables!) and I will definitely be doing the full 2 lb recipe in the future. Kids put chow mein noodles on top but I put French Fried onions. YUM!
So I tried this recipe tonight. I am on a “Mel-kick” since I truly discovered you and how similar our nutritional philosophies are. I cannot even tell you how many recipes I’ve tried the past few months and am such a fan. This has become one of our family favorites! We serve it over rice and use wonton strips. What takes it over the top is Panda Express Bejing sauce (basically sweet & sour sauce with a nice, spicy kick)! Even my insanely picky eater begs for this meal!

This was so so so so much easier than egg rolls and all the flavors delivered. I used ground pork which was yum-o. I cut my wonton wrappers into four smaller squares and they were like chips to scoop. This was so good!
There are not even words to explain how yummy this skillet is. I am already heartbroken there are no leftovers for my lunch tomorrow, and I am debating going to the store again for more ground chicken. I baked wonton wrappers on a sheet pan (sprayed with oil) to accompany, and added bean sprouts since I love them so much. Make it now! You will have no regrets. My somewhat picky, but Asian food loving daughter DEVOURED her meal.

This was good! I used some shredded broccoli stalk with the cabbage and only 1 pound of meat. I didn’t have ginger or garlic, but I did have ginger powder. I also used hoisin sauce in place of the oyster.
