Nothing says Valentine’s Day like fruit pizza.

Huh? You’ve never though the same thing? That’s weird.

Actually, let me rephrase. Nothing says Valentine’s Day like a semi truck full of dark chocolate but since that ain’t gonna happen, I’ll revert to my previous statement.

Nothing says Valentine’s Day like fruit pizza. Really!

Sweet and tender dough, creamy and tart frosting, and of course, refreshing and juicy fresh fruit. It’s a perfectly light and delicious treat.

I like my fruit pizza dough on the thicker side but feel free to adapt things your way (or how your sweetie likes it). Here’s to saying “I Love You” with fruit pizza!

Fruit Pizza

INGREDIENTS:
Dough:
1/2 cup butter, softened
2/3 cup granulated sugar
1 large egg
1 teaspoon pure vanilla extract
Zest of 1 lemon, divided (use the other half for the frosting)
1 1/4 cups all-purpose flour
1 teaspoon cream of tartar
1/2 teaspoon baking soda
1/4 teaspoon salt

Frosting:
1 package (8 ounces) cream cheese, softened
2 tablespoons granulated sugar
1/2 cup powdered sugar
1 teaspoon pure vanilla extract
Fresh lemon juice from 1 lemon (1-2 tablespoons)
Other half of lemon zest from above

Fresh Fruit:
Strawberries
Raspberries
Blueberries
Pineapple
Peaches
Kiwi

DIRECTIONS:
Preheat the oven to 350 degrees F. Spray a 10-inch round or tart pan with nonstick cooking spray. This will give a fairly thick crust. If you want a thinner crust, try using a larger pizza pan shape or a 9X13-inch pan (you’ll have to test this out since I’ve only used a 10-inch tart pan).

For the dough, in a large bowl, cream together the butter and granulated sugar until smooth. Mix in egg, vanilla, and 1/2 of the lemon zest. Add the dry ingredients and mix until just blended. Press the dough into the prepared pan.

Bake the dough for 10-12 minutes, or until very lightly browned. Don’t overbake as the crust will become dry. Cool the crust on a wire rack completely.

In a medium bowl, beat the cream cheese until smooth. Add the granulated and powdered sugar, vanilla, lemon juice, and other half of the lemon zest. Spread on the cooled pizza crust to within 1/4-inch of the edges. Arrange fruit on top of the pizza. Cover lightly with plastic wrap and chill until serving time.

This is definitely a lighter side to all the fattening sweets that are consumed around Valentine’s Day. Of course, I would rather see the truck load of dark chocolate, but if someone gave me one of these, I would be happy, happy, happy. Definitely looks gorgeous.

What to do?! I was going to make the chocolate bowls and pudding for Valentine’s but I love me a fruit pizza as well – and I know yours will be delicious! We’ll have to celebrate all week long.

I havent had a fruit pizza in ages!!! Never say never to the truck load of chocolate!!! I have a sister who works for a huge trucking company in Marshfield…when and where should it accidently be delivered??? LOL

I remember my mom making a fruit pizza for my 16th birthday. My girlfriends and I devoured it! She made it all colorful with kiwi, blueberries, mango, strawberries, and raspberries, but I love the idea of having a theme like Valentine’s Day for your pizza!

This is definitely going on the Must Make list. :)

This was so yummy! My strawberry loving daughter really loved it. I loved the combination of the lemon in the tart and frosting with the fruit on top. This is a definite keeper!

We always had fruit pizza for the Super Bowl when I was growing up. Good memories. :) My mom always added kiwi which is what really sticks out in my mind for some reason.

I have made lots of fruit pizza in my life (even mini ones, check this out! http://triedandtriedagain.blogspot.com/2010/06/baby-shower-food.html), but this one was probably the best one I’ve ever had!! And, so pretty in the tart pan (genius!). I LOVED the little bit of lemon in the cookie and the frosting. Just delightful! Everyone loved it. Thanks for another winner Mel!

Tried this yesterday. Hubby said the crust is like butter cookies, but I feel it’s more like a shortbread. I tweaked the recipes a little bit. I added whipped cream to the cream cheese (because I use a big pan, and it wasn’t enough to cover the crust), and resulted in creamy and not too cheesy filling. I also added lemon flavored jello on the top of the fruits. Really good!

My 2 year old daughter and I made this for my husband for Valentine’s and it was a big hit in my house. Thank you very much for the recipe! I’ve never used a tart pan before and didn’t have one, but went ahead and got one. I wasn’t quite sure how it worked. I ended up turning it over to get the crust out. When I did this the crust fell in the middle a little, but still tasted great. Any tips on how to use a tart pan?

Hi Laurel – whenever I use my tart pan, after the tart (or fruit pizza, in this case) has baked and cooled, I gently press the bottom circle of the pan up while holding onto the sides of the tart pan. If the edges of the tart or fruit pizza need loosened, I gently do that with a knife before pressing the removable circle up. If the edges are loosened, the bottom circle should press right up, releasing the tart. It’s not a problem to leave the metal circle piece on the bottom of the tart while serving.

I made this for Easter dessert. It was received with lots of oohs and aahhs. We had guests for dinner so I fed a total of 7 people and the fruit pizza disappeared in no time. I like a thinner crust so I used my large pizza pan, covered it with foil and then spread the dough on it. It was a little tricky working with the dough but I managed to spread it fairly evenly in a large circle on the pizza pan. It didn’t need to bake as long and in the end, it turned out beautifully. I topped it with blackberries, raspberries, strawberries, bluberries, pineapple and kiwi and now I wish I’d taken a picture of it! It was so pretty. Thanks for the best fruit pizza recipe I’ve ever tried.
