Grilled Corn Salad
Ingredients
- 6 ears of corn, still in their husks
- 1 tablespoon butter, cut into pieces
- ½ teaspoon cumin
- ¼ teaspoon pepper
- ¼ teaspoon salt
- 2 green onions, thinly sliced
Instructions
- To prepare the corn, carefully peel back the husk without removing it completely and tear off the silky threads. Gently fold the husk back over the corn. Fill a large bowl or pot with cold water and soak the de-silked corn for 15-30 minutes.
- Preheat your grill to medium-high heat. Place the corn (still in it’s husk) on the grill and cook the corn, flipping it when each side turns black and charred. The whole grilling process should take about 8-10 minutes (depending on the heat of your grill). The corn husks will get awfully black but don’t worry about that. If you are worried about whether the corn is done, using an oven mitt or something else to protect your hands, pull back the husk and gently cut off a piece of the corn to test it.
- When the corn is juicy and cooked, cut the kernels off the cob (again, using an oven mitt or towel to hold the hot corn while you cut off the kernels). Toss the hot corn with the butter. Stir in the cumin, salt, pepper and green onions. Serve immediately.

My mother in law has Celiac’s disease as well, but that hasn’t stopped her from being an amazing cook! When my husband and I were dating we’d try out new recipes and then share them with his parents, or turn old favorites into gluten-free goodies. We had a blast with that! And along the way my mother in law has shared some of her gluten-free tricks with me. She’s become the expert in our area and can eat just like the rest of us. She’s showed me how to make gluten free cakes, banana bread, and peanut butter cookies that are to die for, along with a lot of others. Watching her overcome that struggle, and learning how to accommodate my cooking has been one of the most fun things I’ve done!
My children’s best friends are all sensitive to gluten, and my sister’s husband has Celiac, so our family is constantly looking for things we can all eat when we’re together. So, I’d LOVE a new cookbook with some fresh ideas! And thanks for adding the gluten-free category in your recipe index!
I don’t cook gluten free but my sister has celiacs and so when she comes around we mostly just try to avoid gluten. I would love to get some tried and true recipes that are gluten free and start adding them to our meals. I trust all of the recipes on your site and just love “My Kitchen Cafe.”
As an avid baker of all things floury and rich, I was worried when I acquired a roommate with Celiac Disease. We’ve been playing with lots of recipes for gluten-free desserts. I think I’ve mastered the gluten-free brownies but my try at a gluten-free peach pie left us unsatisfied. (Gluten-free pie crust that flakes up and tastes rich and buttery? Anyone?)

This cookbook would be a life saver. One of the ladies I visit teach is having a baby in a few months. I plan on taking her over a few meals. She has celiac, so I have been a bit nervous about what to prepare for the new mommy. Since she already has 2 toddler boys, I know a meal would be a big help upon the arrival of baby 3. Plus, I could gift her the cookbook with the meal. 🙂
Our RS has served a few gluten free meals in order ensure all of us can partake. We had a chicken enchilada dish that was really good.

A friend of mine has a son who can’t hair gluten or dairy so when I brought her a birthday cake, I made a special cake for him that was really delicious, if I do say so myself–a chocolate wacky cake with coconut filling and coconut ganache spread over the top to mimic the flavors of a mounds candy bar. I have a good friend that went years undiagnosed with celiacs, and was very ill. She has done a lot of research on gluten free foods. We had dinner with her and her husband one night and it was delicious! We have since found out that my husband’s co-worker is also gluten intolerant along with being diabetic. I am now trying gluten free just so we can see how we feel. I think there are more people out there with some kind of gluten intolerance than we know. Thanks for your recipes! I have made a few things but they are basic just no flour recipes…like pork chops and rice.
My mother is gluten intolerant so I have made several gluten free recipes including cakes – some recipes have turned out great, while others have been down right awful! I am always on the look out from good recipes to share with my mom.
I found out a few of my friends (one of them I had to take dinner to)were on a gluten free diet so I went through my recipes and I made green chicken enchiladas and no bake cookies. Since then, I have been looking at labels and taking note of gluten-free products and recipes. I’m excited to see all of your recipes this week. I’m sure they will be amazing.
My sister’s roommate is allergic to gluten, so we have tried many recipes for her! I like to send them treats during finals week, so I just go easy and send them Puppy Chow made with Chex! Lol So I need some more ideas to treat them with!

my favorite gluten free recipe is easy chicken cordon bleu – chicken breasts split in half and stuffed with slices of ham and swiss cheese, then dipped in egg and sprinkled with italian seasoning. so yummy!

Everything I make is gluten free – I am a Celiac, diagnosed 4 years ago! You really can eat wonderfully on a gluten-free diet.

I think this is a great feature to add to your site. With my job, we cater to a lot of people who require a gluten-free diet, so I have made pizzas, sandwiches, etc that fit into the gluten-free category.
I do gluten-free at my house!! My 7 year old son needs a gluten/casein free diet and so his favorite gluten free meal is taco salad or tostadas with lots of guacamole on top. That’s his favorite! But I would l-o-v-e to broaden my horizons and cook from a cookbook written by someone who knows their gluten-free recipes!! It would be heavenly for me but also for my boy….because heaven knows I need help!
I have been diagnosed with Celiac since I was 2, so I have made my fair share of gluten-free recipes. One of my favorite lunches is to make sandwiches using ricecakes instead of bread…I just melt cheese on them to help them hold together better. I would love to win this book and use it to help me become better at gluten-free baking, something I try to avoid.

I love grilled corn salad! It is my favorite side dish for parties and BBQ’s in the summer! We eat lots of vegetables, so I guess I make quite a few gluten free recipes. My son has autism and we have been told to try eliminating gluten and dairy from his diet to help with his behaviour. A good friend of mine is coeliac and she has given me a few recipes to try but so far I am just muddling through! The same friend did make me a lemon loaf baked with spelt flour and it was delicious, very moist and extremely filling.
We have started eating gluten-free in our house recently. Not because any of us have to. But more as a health thing. I was nervous at first. But the few things we have made have ended up tasting really good. I look gorward to making more gluten-free recipies
