Grilled Corn Salad
Ingredients
- 6 ears of corn, still in their husks
- 1 tablespoon butter, cut into pieces
- ½ teaspoon cumin
- ¼ teaspoon pepper
- ¼ teaspoon salt
- 2 green onions, thinly sliced
Instructions
- To prepare the corn, carefully peel back the husk without removing it completely and tear off the silky threads. Gently fold the husk back over the corn. Fill a large bowl or pot with cold water and soak the de-silked corn for 15-30 minutes.
- Preheat your grill to medium-high heat. Place the corn (still in it’s husk) on the grill and cook the corn, flipping it when each side turns black and charred. The whole grilling process should take about 8-10 minutes (depending on the heat of your grill). The corn husks will get awfully black but don’t worry about that. If you are worried about whether the corn is done, using an oven mitt or something else to protect your hands, pull back the husk and gently cut off a piece of the corn to test it.
- When the corn is juicy and cooked, cut the kernels off the cob (again, using an oven mitt or towel to hold the hot corn while you cut off the kernels). Toss the hot corn with the butter. Stir in the cumin, salt, pepper and green onions. Serve immediately.

My daughter is gluten sensitive, so I have been making more. It’s a little hard to get used to (a lot of gluten free bread products have a sweetness I don’t care for personally) but some recipes have been super yummy!

I have been gluten free for over two years now and have actually learned to LOVE baking gluten free! I have a FANTASTIC bread recipie that includes a cup of almond meal (just grind almonds in a coffee grinder) that turns out great every time.
Also, I love the new Betty Crocker gluten free mixes. I actually just made the chocolate brownies and added a cup of zuchini and a cup of chocolate chips to it to immitate a chocolate zuchini cake my mom used to make. Yum!

I love to make gluten free peanut butter cookies made w/ peanut butter, an egg and sugar or splenda. I also make gluten free coconut macaroons w/ coconut, sweetened condensed milk and egg whites.
YAY! I make gluten-free recipes every day because I have Celiac Disease. I’m still adjusting to the baking but, the cooking is really easy. I just stick to fruits, veggies, rice, potatoes- you have to watch out for some of the spices, though. Those sometimes contain gluten. There’s more to eat than people think! I am really looking forward to your recipes this week. I actually made your coconut oatmeal chewies for my family and they LOVED them. I know they are not gluten-free but, they raved so much about them, I’m going to try to adapt it so I can try them, too! Thanks again.
Everything I make is gluten-free. My husband is a Celiac with a rice intolerance and I have a gluten and soy intolerance. My favorite thing to make are gluten-free cookies or cakes. On the list today are coconut-lime sugar cookies and chocolate chip cookies.
We have multiple members of my extended family that have Celiac Disease. We are always trying new recipes to feed them when we get together. Two of my favorites are Brownies made with black beans (seriously, it really is good) and Coconut Pistachio pie (the crust is made with the coconut). I was able to attend a cooking class by Chris, and fell in love with her cookbook. I couldn’t believe how great her donuts, waffles and cinnamon rolls tasted. And they weren’t grainy like some of the other mixes are. Thanks to both of you for helping us cook for our GF families.
I haven’t really made anything just because it’s gluten free, but I have had good intentions of baking with coconut flour (it smells delish) and there’s a recipe for sugar cookies using that instead of all purpose flour. I can’t wait to try them and bought the flour awhile ago.

My friend, who is constantly surfing for great recipes, sent me the link to your site. I have found that eating gluten free has relieved my discomfort from Crohns so welcome any new recipes. I accidently invented my new favorite recipe last week. With a bounty of zuchini from our garden, I was craving our tried and true casserole. I found out that I had sprue (a type of celiacs disease) 25 years ago after the birth of my 3rd child. They had NO good recipes then and nothing you could buy at the store. With the rage of the Adkins diet, followed by many more, you can buy gluten free products everywhere. I learned to eat spaghetti sauce on rice or baked potatoes. With 7 kids eventually, it was easier to go without then to make special for me. Bring on those gluten free recipes, I’m ready to treat myself.

My friend Sara (a self-proclaimed “stalker” of your site!) pointed me your way today – and I’m soooooo glad she did! I’m gluten intolerant (sigh), and so I’ve cooked many a gluten free failures, er, I mean dinners + desserts, etc. Unfortunately, I’m the worst cook ever. EVER. But I try really, really (really) hard. I just can’t seem to get it right.

I have been gluten free & dairy free for about 6 weeks now. I am a wanna be chef and LOVE to cook. The first few weeks I found myself salivating over my little boy’s peanut butter sandwich and practically drooling on the bakery glass at the grocery store! I must admit, however, that it has gotten easier because I feel better. I have become a much more creative cook and have re-created absolutely delicious recipes to prepare for my family and friends…the best part is that they can’t tell the difference and for that matter, neither can I! My motto now is: Don’t look back!

I actually started going gluten, dairy, and sugar (refined sugar) free a while ago to cut down on the inflammation I have to help control my chronic pain condition. I have found many wonderful gluten free recipes and learning how to tweak recipes of favorites to be gluten free has made this change a lot easier. For the most part, I have been able to make food that is so tasty that no one would know the difference (I sure don’t)! Plus I love using spices, so this helps a lot in cooking gluten free.
So excited to see this week’s recipes and to look at the recipes in your new category! I haven’t ever made a gluten-free meal (at least not intentionally or that I’ve realized) so I’m excited to try some.
I suffer from celiac’s disease and in addition to my gluten allergy I also have and allergy of casein which is protein in dairy. I am so excited to see the recipes you will showcase this week. Thank you for thinking of us!!

I’m so glad you are doing a week of gluten free cooking! My mom has Celiac disease, so I have definitely done some gluten free cooking. What I have found most surprising over the past few years since she was diagnosed is that there is a multitude of regular food we eat that is gluten free just by its nature. I don’t mind gluten free cooking, but I really hope I don’t end up needing it; I love bread and pasta too much!

I have made lots of gluten-free food – 10 members of husbands family have Celiac and a good friend. My favorite recipe is “flourless chocolate torte” – YUM!
I am so very happy to see you adding these recipe to your site. I recently discovered I have a gluten allergy (in addition to my lactose intolerance!) so I’ve been trying lots of new recipes. I’ve always struggled to get enough vegetables in the day so have learned to love my Crock Pot because it’s so easy to make soups and stews with lots of veggies, lean meat and no wheat or noodles. One of my favorites is a Peanut Butter Chicken Vegetable Soup – sounds strange but it’s so delicious that I don’t even miss the crackers!
