Grilled Corn Salad
Ingredients
- 6 ears of corn, still in their husks
- 1 tablespoon butter, cut into pieces
- ½ teaspoon cumin
- ¼ teaspoon pepper
- ¼ teaspoon salt
- 2 green onions, thinly sliced
Instructions
- To prepare the corn, carefully peel back the husk without removing it completely and tear off the silky threads. Gently fold the husk back over the corn. Fill a large bowl or pot with cold water and soak the de-silked corn for 15-30 minutes.
- Preheat your grill to medium-high heat. Place the corn (still in it’s husk) on the grill and cook the corn, flipping it when each side turns black and charred. The whole grilling process should take about 8-10 minutes (depending on the heat of your grill). The corn husks will get awfully black but don’t worry about that. If you are worried about whether the corn is done, using an oven mitt or something else to protect your hands, pull back the husk and gently cut off a piece of the corn to test it.
- When the corn is juicy and cooked, cut the kernels off the cob (again, using an oven mitt or towel to hold the hot corn while you cut off the kernels). Toss the hot corn with the butter. Stir in the cumin, salt, pepper and green onions. Serve immediately.

My son was born with a wheat allergy so we were gluten free for 2 1/2 years before he was able to tolerate it. We have tried lots of gluten free recipes, some which were terrible, but some were quite good.

My son is dating a girl who has celiac disease so we have tried a few basic things but I would love to try new recipes so we can cook for her and, hopefully, impress her. My father-in-law was diagnosed with Celiac about 7 years ago. He doesn’t mind so much (especially since he feels SO much better now), but my mother-in-law really struggles with trying to find yummy, healthy gluten-free meals that the whole family can love (my husband is the oldest of 7 kids, 4 of which still live at home) Every time I make something that is delicious which also happens to be gluten-free, I always send it over to them. I can only imagine the field day she would have with a cookbook like this!!

I have not purposefully made gluten free food, although tonight I opened your page specifically to get gluten free recipes and look what I found! I have two friends who recently found out they need to eat gluten free. One of them has been telling me for weeks how much better she feels overall. She always comments on how much healthier and more natural she eats now. I have been trying to get myself and my husband onto a better eating track and had just this week decided that once the gluten is out of our house (we can’t just toss it all!) I’m going to really try to buy gluten free. I had a yummy dinner of cold rice, left over chicken and veggies the other night at this gluten free friend’s house. It was so good and just the kick I needed to get my butt in gear!! I love the idea of eating a lot less processed foods… we’ll see how it goes!

Thank you for posting the Gluten Free recipes and for adding the new catagory! I was recently taken off Gluten by my doctor and had already had to eliminate Dairy because of allergies so it has been very difficult for me to come up with anything to eat. I feel like I am stuck with very few choices and can’t wait to give some of your recipes a try. The one thing that I miss the most is Bread. I have tried a couple of different recipes with my bread machine but I haven’t had much luck. Thank you again for your recipes and for giving me some choices!
Mel, my mother-in-law has Celiacs and even though he denys it and doesn’t want to get tested, I have a feeling Aaron might too. I’ve been trying really hard to cut out a lot of that kind of stuff out of our diet, but haven’t gone cold turkey yet! I’d love a copy of the cookbook for Cindy! Hmmm, maybe a great Christmas present idea! She always tells me not to worry about cooking specifically for her when she comes, but how can I not. Last time she came we had shish kabobs and potatoes one night (Aaron’s favorite) and then we did the Southwest Crockpot chicken dinner. She loves that cause she just eats it over corn chips. I have cook gluten free once. I was making treats for a group activity and made mini pumpkin pies. Sadly, the did not turn out very well. The mix I used had a little too much salt and in my haste, I forgot to put the sugar in the pumpkin. My friend aprciated my efforts though.
My hubby is gluten intolerant so we make gluten free foods regularly. I especially like the gluten free corn bread that we developed using almond meal with corn meal. I would love more ideas on how to prepare things for him that are homemade. The store bought gluten free items are so over priced!
My 18 month old eats totally gluten and dairy free…we are excited for your gluten free week. I bake a lot gluten free and my baby seems to love it all, it’s just finding the right recipe!
oops forgot to say… Yes! I have to cook & eat gluten free because I’m gluten intolerant. Basically we can eat any meat, veggies & rice.. It’s what you add to them that makes a difference. Would absolutely Love to win the cookbook!

One of my best friend’s husband and son have celiacs disease… so need to find wheat free meals whenever we’re getting together with them. I tend to go ethnic…mexican, indian, asian. Things that are gluten free without much in the way of modification.

I was diagnosed with Celiac disease 4 years ago. I’ve been experimenting every since! My favorite gluten free recipe is a brownie recipe with marshmallows and chocolate frosting! Yum! It’s delicious! My husband even took some to work and his coworkers devoured it! I love to cook and would love to try the recipes in the Irresistibly Gluten Free cookbook!

I just recently found out I had celiacs. My grandpa has it as well and he told me that there was nothing to eat! At first this comment scared me. But now I laugh at it. I know that there is a lot of food out there if you have celiacs, it’s just most of it you need to make yourself. So now I am saying goodbye to fast convient food and hello to my kitchen. I am actually really excited about this new adventure. My husband and I have been trying to be healthier and eat out less and this will really help us.
My favorite recipie I have tried so far is White Rice Bread. It tastes like a sweet corn bread. Corn bread is my favorite so I love this bread. A great summer treat or lunch is a slice of this bread with Miracle Whip (miracle whip is gluten free but maynoase is not) and a few slices of fresh tomatoes on top. This trully is delicious! It tastes way better than anything found in a store and it’s really fast.
The recipie for white rice bread is:
2 eggs
1 cup of liquid ( water, milk, juice)
4 tbsp. sugar
4 tbsp. canola oil
2 cup Bob’s Red Mill White Rice Flour
4 tsp. Baking Powder
1 tsp. salt
Preheat the oven at 425. Lightly greas bread pan. Mix all of the ingredients in bowl. Pour mixed ingredients into the bread pan. Place in oven and cook for 20 – 25 min. Let cool.
This recipie is fast and easy. The bread is a little crumbly but it tastes great!
I do not cook gluten free, but have a couple friends who have children that require gluten free choices. I am excited to pass this one along to them!

I have cooked GF on many occassions! Both my husband and I have extended family who require GF, and I have gotten some pretty good results with the recipes I have made and/or switched up! My favorite to date, is my GF “funeral” potatoes, in fact my husband prefers them to the regular kind! I would love to have a cookbook that is GF!

I’m sure I’ve made recipes that are gluten free, but not on purpose! I’d love to start though because I’ve noticed more and more people all the time are finding out that they have celiac disease. Two of my neighbors do, and I never offer to take dinner to them because I am scared to cook gluten free. So a cookbook would be an awesome help!
My niece has celiac’s disease, so I have made her peanut butter chocolate chip cookies that were gluten-free. They were pretty yummy, although a bit heavy (the majority of the batter was peanut butter).
I tried to make some gluten free dough for pigs in a blanket once… I really did not know hardly anything about making something gluten free and I had no idea at the time what xanthan gum was or why in needed to be in the recipe. Sadly all of this amounted to a huge failure with the dough.
I’ve never cooked gluten free on purpose, but am definitely becoming more and more interested in it. Plus a friend of mine is heading down that path with one of her children so I know i’ll be doing it more and more.

My gluten-free (and dairy-free!) friend came to visit a few weeks ago, and it completely opened my eyes to this daily difficulty. My favorite recipe we made that week was BBQ pulled pork sandwiches…but we cheated because she had a gluten-free bun and we had regular ones. I make a lot of Indian food and Thai food, which most is actually gluten free without modification (if you exclude the yummy Naan and other breads). I would love to win the cook book so I can give it to my sis-in-law who has Celiac’s and I’d love to have great recipes for when I need to entertain gluten-free. Thanks for the corn recipe. My brother has a particularly strong case of Celiac and so I was always trying to make him something nice to eat growing up. He was allergic to so many things he ate mostly hamburger carrots and potatoes. Kind of boring if you ask me. One of his favorite desserts was made by Chili’s restaurant, but it unfortunately contained flour. I attempted to remake it at home with not the greatest success. The only real success I ever had was making him a devil’s food cake recipe from scratch. Probably luck but it ended up really moist and tasty. Now it seems my daughter might have a gluten intolerance and I would love to find some great recipes so she can still enjoy a variety of foods.
