Hot Hoagies
These hot hoagies are creamy, cheesy and delightfully flavorful. They are also faster than fast to put together. Perfect for a hectic night!
One year when I was about four months pregnant, I had to have surgery – as in, put me under, recover in the hospital for four days and go home still feeling miserable.
The recovery was long and hard, especially with three children running about at home.
One night, unexpectedly, a dear friend of mine showed up without calling first and brought me dinner. These hot hoagies, to be exact.

Little did she know it was a “crisis” night – my husband was out of town, I was still recovering from surgery, I was pregnant, and my kids were going nuts-o.
Throwing something together for dinner was loooow on my priority list, much to my children’s hunger and dismay.
The meal my friend brought was simple and definitely not fussy – but it was delicious and filling and earned a special spot in my food-loving heart.
These hoagies are creamy, cheesy and delightfully flavorful (thanks to the parsley, green onions and garlic).
I’ve been making these ever since for a quick, weeknight meal that is faster than fast to put together and my kids eat it up without gagging or complaining.
And if that isn’t a successful meal, I don’t know what is.
What to Serve With This
- Amazing Shrapnel Dip and chips
- Apple slices and Honey-Yogurt Dip
- Tomato and avocado slices
- Hard Boiled Eggs
Hot Hoagies
Ingredients
- 1 loaf french bread, cut lengthwise
- 2 cups cooked shredded chicken, (in a pinch, you can use two large cans chicken breast)
- ½ cup light mayo
- ½ cup reduced fat sour cream
- 2 green onions, thinly sliced (white and green parts)
- ½ teaspoon garlic salt
- ⅓ cup fresh parsley, chopped (or 2 tablespoons dried)
- 2 cups shredded cheese, I used a combo of monterey jack and sharp cheddar cheese
- Olives, chopped (optional – I omit these due to my kids’ preferences)
Instructions
- Preheat oven to 350 degrees.
- Place french bread on large baking sheet. Mix all topping ingredients together in a bowl. Spread topping evenly on top of both lengths of french bread.
- Bake for 15-20 minutes until bubbly and edges are lightly browned. Slice into pieces and serve immediately.

Dana – I think as long as the hoagies will be baked within 24 hours, it would be fine to put the topping on the bread. Otherwise, bringing it in a separate container sounds like a good idea. Thanks for the comment – I’m so glad you are enjoying the recipes!
I want to take this to a new mom in addition to your Sweet and Sour Chicken (so amazing). But I want to take it unbaked should I keep the topping separate and she can put it on the bread when she wants to bake it or should I make them up ahead? I am thinking they will be a great lunch for them the next day.

My kids especially loved it 🙂 I found this recipe after making a bunch of your make ahead shredded chicken & needing a quick meal tonight I thought about my chicken in the freezer & did a search for a recipe under your shredded chicken link. It was perfect. Came topping came together in a few minutes & while it was baking I made a quick salad & dinner was ready to eat in less than 1/2hr. Thank you Mel!
This met a lot of my ideals: yummy, quick, easy, common ingredients, not a lot of dishes, and inexpensive! It was perfect for having friends over for lunch today!
Michelle – full fat would be absolutely fine – I just always have the low fat on hand so that’s why I listed it in the recipe. I’d say that depending on the size of the loaf of bread, it could probably feed 4-6 adults pretty easily.
How crucial is the reduced fat mayo and sour cream? Would full fat be a problem? That’s what I have. And how many adults would it serve? Want to make it for between conferences on Sunday with some friends coming over.
You just solved my dinner dilemma. I was surfing around looking for a quick and simple recipe using boneless, skinless chicken thighs. These sound easy and delicious and I have everything in the pantry. Love when that happens. 😉

This has become one of our family favorites! Here’s my silly little question: When your friend brought them over, did she bring them prepared but not baked, or had she already baked them? I wanted to take a meal to a friend tomorrow night, but I wasn’t sure if I should cook them or not! Thanks for all the great recipes!
Catherine – that’s actually a great question! My friend brought them to me unbaked so that I could bake them when I needed (she brought them earlier in the day). I would suggest leaving them unbaked since they only take a matter of minutes to bake up.
I started reading your blog a little over a year ago and I loved the story you told to go along with these sandwiches. I have made these twice in the past month and it is a great Friday night dinner when I don’t have the energy to prepare another meal. I always have cooked chicken in my freezer and all the ingredients are cheap and always on hand at my house. Also, other than the bowl to mix the ingredients and one foil lined pan, there is no clean-up. We love them with french fries and a vegetable.
I made these and absolutely loved them! My bread got a little crispy so we put it in the microwave and it was perfect! Your blog is really making me love to cook 🙂 Thanks!!

We tried these out for dinner tonight and they were a big hit! I left out the green onions and included a diced yellow pepper. My hubby and kids all loved it!

Holy Smokes! These are so stinckin’ easy to make….and eat:) They are soooo good. I made them last night and my husband asked when I was making them again. After a long day of running errands in the rain with my 6 and 3 year old, the first question they ask as soon as my hand is on the front door was,”Whats for dinner??”. Boy was I glad it was this!! I can’t have my own children so I can only imagine what it would be like to be pregnant but to find out you have a brain tumor while pregnant would be so hard. Made these last night and they were super yummy! It was a last-minute-throw-something-togher night and so we didn’t have all the ingredients so we substituted. We used yellow cooked yellow onion instead of green and we didn’t have french bread so we used hamburger buns instead. They turned out fantastic. I have a 3yr old who won’t eat anything but pb&j, mac & cheese, and chicken nuggets but he ate these. They were a huge hit and I can’t wait to try them with the proper ingredients.
P.S. I think I’m going to add artichoke hearts next time too.
