Dan Dan Noodles {30-Minute}
Thanks to these 30-minute Dan Dan noodles, dinner night has never been easier! So fast, so easy, and so scrumptious, the Asian-style sauce knocks it out of the park with flavor.
Dan Dan noodles! It’s not just fun a name to say (you should have heard my kids chanting it all day when I told them what was for dinner); you simply can’t beat a 30-minute meal that tastes this amazing.
These Dan Dan noodles are incredible. Taking my favorite flavors from several other dishes, the sauce covering the tender ground beef and noodles is a little sweet, a little spicy, and a little creamy.
For those who haven’t quite converted to savory peanut sauces (one of my favorite flavors in the history of ever), this recipe is a great place to start. The peanut butter flavor is subtle and doesn’t overpower the other tangy, spicy and sweet elements of the sauce.

While no doubt there are more authentic recipes of Asian noodles out there (and I’m sure they are amazing), these simplified versions are easy, fast and packed with flavor.
In fact, very often, noodle dishes like this are my go-to for saving dinner night when time is short, I’m grumpy, there are no dinner angels to be found, and chaos at home is far reaching.

Dan Dan Noodles {30-Minute Meal}
Ingredients
- 12 ounces spaghetti noodles
- 1 ½ cups low-sodium chicken broth
- ¼ cup creamy peanut butter
- ¼ cup low-sodium soy sauce
- 1 teaspoon chili garlic sauce, plus more to taste, if you like things spicy
- 1 tablespoon cornstarch
- 1 tablespoon brown sugar
- 1 tablespoon rice vinegar
- 2 teaspoons sesame oil
- 2 pounds lean ground turkey or beef
- ½ teaspoon salt
- ½ teaspoon black pepper
- 4 cloves garlic, finely minced (about 1 tablespoon)
- 1 tablespoon freshly grated ginger (see note)
- ½ to 1 cup fresh, chopped cilantro
Instructions
- Cook the spaghetti noodles in a large pot of lightly salted, boiling water until al dente, according to package directions. Drain and rinse with cool water. Return to the pot and set aside.
- For the sauce, in a medium bowl or large liquid measuring cup, whisk together the broth, peanut butter, soy sauce, chile-garlic sauce, cornstarch, brown sugar, rice vinegar and sesame oil until smooth. Set aside.
- In a large, 12-inch nonstick skillet set over medium-high heat, add the ground meat, salt, pepper, garlic and ginger, and cook, breaking the meat into pieces, until no longer pink, 6-7 minutes. Drain any excess grease.
- Return the skillet to medium heat, whisk the sauce to recombine, and pour over the meat mixture. Bring the mixture to a simmer and cook for 2-3 minutes until the sauce has thickened slightly. Stir in the cilantro.
- Pour the meat/sauce mixture over the noodles in the pot. Serve immediately.

This recipe is a freakin’ game changer!!! We LOVE it!! It’s one of my husband’s absolute favorites so the kids lovingly call it Dad Dad Noodles. Somehow this meal always hits the spot, even my 2-year-old clears her bowl! The left overs are just as amazing as fresh so we double it often and enjoy it throughout the week!

I found this while looking for an easy dinner and I am so glad! It was delicious! I used ground beef and was please how quickly it all came together. The kids had it with pasta and my husband and I ate it over rice. I am sure it will be even better left over for lunch tomorrow!
I made Dan Dan noodles the other night and it was a hit. My family was surprised that there was peanut butter in the recipe. The Spicy garlic chili sauce gives it a nice little after kick depending on how much you use. I will definitely be making this a lot thanks for another awesome recipe.
Delicious and super easy! I didn’t add the chili sauce to keep it kid friendly and all three of my boys (2, 4 & 6) ate it which is a miracle! My husband said, ‘Really good, I appreciate the creativity.’

For some reason this recipe has been in the back of my mind as a quick dinner idea all this time, but I never made it till last night. We liked it a lot! I added a chopped red pepper to the turkey before adding the sauce. I also made zucchini noodles for those over the age of complaining and it made for a super easy and healthful dinner!
This recipe turned out better than I even expected. The perfect balance of flavors with just a little bit of mild spice. My husband and 2 year old both gobbled it up and asked for more! Thank you for such a great recipe. This is definitely being added to the dinner rotation in our house. 🙂
Amazing!! I used ground turkey and no Chile sauce since I have teeny little ones eating. I was a little worried as the peanut butter was melting into the turkey and I had a moment of “oh no what have I done? This is going to be terrible!” It was seriously wonderful. I was hesitant because the recipe calls for ground beef and I prefer grilled chicken with the noodle/peanut sauce combo (coming from my Indonesian food influence as a child). However, the ground beef didn’t bother me at all. My family ate it right up. It was quick & easy. Definitely will make this again!
I only had leftover cooked chicken so I used that’s instead of ground turkey And it was fabulous! Thanks so much for a yummy easy dinner

Hey Mel! I would love to make this recipe but my son is allergic to peanuts…bummer I know. Any suggestions for a sub? Would almond butter work? Or is the peanut flavor make or break for this dish?
Yeah, I think you could definitely use another nut butter. Some (like almond) aren’t quite as smooth as peanut butter but if you are ok with a bit more texture, it’ll probably work great!

My family loves this recipe! After making it several times, our favorite rendition uses ground chicken instead of ground beef and I like to top mine with julienned cucumbers and fresh bean sprouts. They add a tasty crunch and take the dish to another level.
We love this recipe!! so easy to make and so full of flavor. I subbed noodles for spaghetti squash “noodles” (cooked in the pressure cooker from your post!). Dan Dan spaghetti squash is divine together and a new family favorite. I’ve made it a couple times now and it is always gobbled up. Thanks Mel for keeping us happy and well fed!
It was good. It got the family fed and it was easy to make. I did sub chopped veggies (yellow bell, onion, carrots, shredded zucchhini) for one of the pounds of meat; two pounds would have been too much meat for us. We also used crunchy peanut butter; we liked the bits of peanuts through out.

There is no similarity between this recipe and any other form of dan dan noodles I have seen or eaten. Crispy bits of pork mince and pickled veg in chili oil broth are the defining features of dan dan noodles, and none of these components feature in this recipe. It’s like claiming a chicken burger is a steak. Call this dish what it is: spaghetti with a creamy peanut sauce.
Well, E, there are a multitude of online Dan Dan/Dan Dan Mian recipes that are similar to this one, several by Asian cooks & those who have eaten it in Sichuan Province. If you had made this recipe, you would have tasted that the base of chili peppers and garlic that Szechaun cuisine is known for has remained intact, with the peanut butter hardly detectable. Though, granted, everything isn’t swimming in chili oil with pickled vegetables. A fact for which I am glad.
Remember, these are street noodles & vendor recipes vary greatly, even in the same county. It would be like expecting a chocolate chip cookie recipe to be the same everywhere!
Also, take into consideration Mel’s audience. Busy home cooks probably don’t have grocery stores with sui mi ya cai. They would, however, have access to spaghetti noodles (Asian cuisines use wheat noodles!) and ground turkey over minced/unseasoned ground pork.

This is a great starting point! I made some changes:
1. Use only one pound of ground beef, and add a sliced onion, a matchsticked pepper and a large carrot.
2. Siracha instead of chili garlic sauce. No extra garlic.
3. Almond butter instead of peanut butter.
4. Added an extra teaspoon of cornstarch (typical since I prefer my stir fry sauces thicker than Mel.)
5. Cook meat, garlic, ginger, salt, and pepper. Set aside. Stir fry vegetables. Add meat back in and then sauce.
Really good! A hit for my kids and husband and I liked the vegetable additions.

Me again! I love this sauce! It is very versatile. I chopped up some broccoli, carrots, and peppers to use for this variation and then realized I had no ground meat. At first, I shelved it—I put the sauce in a mason jar and the veggies in the fridge. Today, a couple of days later, I was craving it but still had no meat, so I decided to just use the sauce over stir fried vegetables! I cut up an onion and some more broccoli, and stir fried the veggies with salt, pepper, garlic, and ginger. Added the sauce and cooked for a few minutes and it was delicious!

Delicious! Next time I’ll add some chopped peanuts on top, or use crunchy peanut butter because I think it needed a crunchy contrast. Thanks for another great recipe! Even my picky kids loved it. My 6 year-old daughter told me I needed to get on my computer and tell you that it was so yummy!
I added matchstick cut carrots and a handful of frozen peas– turned out yummy! But I like the suggestion by another poster to add sliced red bell peppers — and, I’d keep the carrots as well, making it a one dish dinner. Thanks for a fast, easy, delicious recipe!

How integral is the cilantro? Cilantro was out of stock and I’m so bummed because I wanted to make this tonight! Think it would be worth it to postpone until I can make another grocery store trip?
Hmmm, I think it’s pretty important in this dish for flavor and just that fresh pop!
I know it doesn’t help a year after the fact, but for others, I keep cilantro frozen and it works great almost any time I need it (except when it’s supposed to be a garnish– since it gets kind of wilty if it sits out on its own).
Here’s what I do so I can have cilantro on hand and/or can’t use a large bunch before it gets old:
1. Take off the rubber band/tie, separate sprigs and gently wash & spin dry in salad spinner. No need to discard the stems– they add great flavor!
2. Divide bunch into 2-3 parts & gently wrap in paper towels. Put into a gallon-sized freezer bag, making sure to get out excess air.
3. When needed for a recipe, pull it out right before it’s needed & chop up the desired amount. Quickly put the remainder back in the freezer.
It is a super close second to having it fresh and works great in Mexican and Asian dishes!

I made your Dan Dan Noodles on a whim for company last week. What a great recipe! So quick and easy and very tasty! I received compliments from everyone. Even my son who has spent many years in China loved the flavor (even though he chided me for using spaghetti noodles!)

I was trying to figure out what to cook for dinner that night, and when I checked my feed and saw this recipe, I made it the same day. I had everything on hand and it was SOOOO good. Ok, you’ve outdone yourself posting this recipe. I finally got around to trying it this week and we were blown away by its flavor and simple weeknight ease. Both of my young children slurped it up (good thing it was bath night). I halved the sauce mixture and used just one pound of ground meat (I actually use lean elk meat because my husband is a hunter) and it was awesome! I also used angel hair pasta. I can easily see how adding some shredded carrots or red bell pepper to this could amp up the veggie factor, but its fab on its own, too. I wouldn’t recommend skipping the cilantro because it makes the flavor pop. Thanks – this is going into our regular rotation.
I use probably 3-4 of your recipes a week. My kids (teenagers) know if I say it’s a “Mel recipe” it will be tasty. This is one of my absolute favorites. I don’t know what I love about it so much but it is delish! Thanks for being my go-to!
I am one of those who is not crazy about peanut butter in savory dishes, but went ahead and took Mel’s advise and made this. The peanut flavor is very subtle and with the fresh garlic and ginger and Asian flavors it was very good! We had an unexpected dinner guest and it was enjoyed by all! Thanks Mel!

I made these last night and they were a big hit! Even though the meat mixture is similar in appearance to your Korean beef recipe (which we also love), this has its own unique flavor. What Brand of Rice vinegar do you use? I thought they were all sweet, but the last bottle I bought was Not sweet at all. In Asian noodle recipes, is the most common Rice vinegar used; Sweet or not sweet? I’ve never made Any Asian recipes, & I LOVE Asian noodles, so I am going to buy all the ingredients & try your recipes. These DanDan Noodles sound like a easy start for me. LOVE your site! Mona
Mona, I’m sure Mel will reply, but wanted to add my 2 cents! I use a lot of rice vinegar and use the Marukan brand, but here’s the key: buy plain rice vinegar, NOT seasoned rice vinegar. Hope that helps!

How much does the sesame oil matter? Or can I just use an oil already in my pantry? 🙂
Sesame oil adds its own unique taste.
Sesame oil definitely adds a unique and delicious taste and is worth keeping on hand in the fridge (lasts a long time).
Are you supposed to refrigerate sesame oil?! I’ve always kept it in the pantry.
I always refrigerate it because I’ve had some go seriously rancid in the pantry. Certain brands I’ve noticed get a little thicker in the fridge but it still works fine (Trader Joe’s brand is the one I usually buy).
Okay thanks! I ended up buying some and making these last night, and my husband loved them (and three of our neighbors who were over for dinner). I didn’t love them, due to either the ginger and the pb, or the fact that I’m pregnant. But everyone else loved it, and it was so fast and easy!!!

There are about a million versions of Dan Dan noodles floating around the food world now, but here is why they got started with that name. Kind of interesting 🙂 “The name refers to a type of carrying pole (dan dan) that was used by walking street vendors who sold the dish to passers-by. The pole was carried over the shoulder, with two baskets containing noodles and sauce attached at either end. As the noodles were affordable due to their low cost, the local people gradually came to call them dandan noodles, referencing the street vendors. Literally, the name translates as “noodles carried on a pole”, but may be better translated as “peddler’s noodles”.”

I’m excited to try this tonight! BUT, even more excited about your adventure in Ghana! There are so many delicious dishes to try! I lived in Togo for 2 1/2 years. You MUST try Red Red (black eyed pea stew with plaintain) and fufu with light soup! Some good places in Accra to get authentic local food are Chez Clarisse, the Ghanaian Village at La Palme hotel (although be sure to bring bug spray!), and my favorite–Chez Tante Marie–be sure to sit upstairs!

Your Dan Dan Noodles look great! I love your tip about freezing ginger. No more tossing leftover pieces of ginger that have gotten moldy. 😉
And for those of us who are super-lazy (that’s me!), you don’t even have to cut it into one inch pieces. Just throw the whole thing in a freezer bag and grate as needed (peel and all)!
