Soft and Chewy Caramel Popcorn
Best ever soft and chewy caramel popcorn! This easy recipe is our tried-and-true favorite for whipping up a batch of homemade caramel popcorn. So yummy!
Believe it or not, one of the recipe questions I get the most online and in person is: do you have a favorite recipe for caramel popcorn?
Especially this time of year. Apparently the cool, fall temperatures brings out caramel popcorn lovers everywhere.
And it’s always a little disappointing to everyone involved when I have to quietly confess that caramel popcorn, while lovely and delicious, isn’t on my list of favorite foods I want to eat for the rest of all time.
I certainly have nothing against the beloved treat, but I’d much rather face plant into a bowl of warm, buttery, salted popcorn over a bowl of soft and chewy caramel popcorn.
I know that makes some of you very sad. But don’t despair yet!
I can still appreciate the merits of really, really good caramel popcorn albeit in small doses. And in the interest of hopefully making many of you happy little caramel corn campers, I’m sharing with you a family favorite recipe today.
It comes from my ancient recipe binder where my amazing aunts stuffed the pages with their best recipes. I believe my Aunt Laurie is to blame (ha!) for this irresistible soft and chewy caramel corn recipe.
And you have to know it’s a winner if a “meh” caramel corn fan like me finds it pretty tasty.
It’s not altogether too different from a lot of other gooey caramel popcorn recipes floating around online except that I’ve adjusted the popcorn to caramel ratio to the perfect level of soft and chewy deliciousness.
The great thing about this recipe is that if you want it even more caramel-soaked, use less popcorn. Voila! The most caramelly popcorn in the world.
Conversely, if you want your popcorn just lightly touched with the magic of caramel, increase the amount of popcorn you use.
Can you add nuts? Well yes. You sure can! I tend to be a no-nuts-in-my-desserts-94.7%-of-the-time kind of gal, but toss in some nuts if that floats your boat.
And if you want a super charged gooey factor, read the notes below the recipe. Ok, fine. Spoiler alert: adding 8-10 large marshmallows to the quick homemade caramel mixture will make the ooiest, gooiest caramel popcorn in all the land.
And in the interest of not coming across as a total caramel popcorn scrooge, I actually do have an ancient (bad photo alert!) recipe for caramel popcorn on my site. Right here in fact.
I haven’t made it in a long time, but Brian, our resident caramel popcorn lover of extraordinary proportions, rated it 10/10 when we used to make it.
Much creamier, it uses whey protein powder in the caramel mixture. Which sounds weird. Because it is. But it actually works.
So if you are interested in thinking outside of the soft and chewy caramel popcorn box, that recipe should be next on your list.

Soft and Chewy Caramel Popcorn
Ingredients
- 10-12 cups plain popcorn, about 1/3 cup kernels, popped (see note)
- 1 cup (212 g) packed light or dark brown sugar
- ½ cup (113 g) salted butter
- ¼ cup corn syrup
- Pinch of salt, I use coarse, kosher salt
- ½ teaspoon baking soda
- 1 teaspoon vanilla extract
Instructions
- Place the popcorn in a large bowl (you’ll want extra room in the bowl for tossing the popcorn with the caramel).
- In a medium saucepan, add the brown sugar, butter, corn syrup and salt. Heat the ingredients over medium-low until the butter is melted and the ingredients are combined. Increase the heat to medium and bring the mixture to a simmer, stirring often.
- Cook for 3-4 minutes, stirring often.
- Off the heat quickly whisk in the baking soda and vanilla (the mixture will foam and bubble). See note below about adding marshmallows.
- Immediately pour the caramel over the popcorn in a slow steady drizzle, tossing the popcorn to evenly coat in the caramel mixture. The caramel will set up and harden a bit as it cools so mix as quickly as you can (an extra set of hands can help during this step).
- Serve immediately or within a couple hours.

Do you have any recommendations for this recipe at high altitude? I know caramel hits the hard stage at a lower temp here in Denver, so would I just trim a minute off the simmering time?
Hi Chrissie, I’m not a ton of help for high altitude adjustments since I live at around 2,500 feet, but yes, you could try simmering for a bit less time and see if that helps. Good luck!
We’ve made this recipe many times and love it! Today I couldn’t find my vanilla, so I put 1/2 t maple extract instead. Yum! I might try other extract variations now. Awesome recipe, Mel!
i made this but when the mixture to rolling boiling stage I add 1/2 cup heavy cream and a hand ful of marchmellows take few to a mixed in nice a chreamy mixture then add the vanilla and baking soda then a few nuts i add to the mixture , oh know that a chewy yummy yummy triple yummy carmel popcorn

I have to admit i love the soft caramel popcorn, the ooier gooier the better. I cant wait to try this recipie. I do have a couple questions though…
I don’t use whey in any recipe, can i eliminate this or if needed use something else in its place that i may have. I know whey is something i could definitely use in different recipes to encourage healthier eating, and probably should,
but just dont.
Also, how much popcorn, approximately even would help. I usually buy bagged popcorn that is popped. 1 bag per bowl?

I think others have tried honey – the texture isn’t quite as chewy and the flavor is different, but it is worth a try!

Made this tonight and it was a big hit! We have movie tonight with our 4 year old about once a month and she always requests caramel popcorn. Another hit! I’m more of a crunchy caramel popcorn fan because of the mess that gooey caramel popcorn makes. But, this recipe is so worth the sticky fingers! Super easy, buttery, sugary, gooey, and messy. We will 10/10 be making this again!

This caramel popcorn is chewy, addictive and absolutely delicious!
It is pretty sweet and gets stuck in your teeth (ha, comes with the territory) so it’s nice to snack on while alternating bites with baby carrots. This helps get the sticky pieces out of your molars AND cleanses your pallet so your tastebuds get the full, beautiful impact of the caramel with each bite. Also helps avoid sugar overload. 🙂
And if you’re a fan of Chicago mix popcorn (cheddar popcorn + caramel popcorn made popular by GH Cretors and Garrett Popcorn), sift some cheese powder over the popcorn after mixing in caramel for a delicious variation. (You can get cheese powder from online retailers or you can cheat and open a mac & cheese packet).
This is my new favorite soft caramel popcorn recipe, hands down.

I have a deep love for caramel popcorn, especially the soft and gooey kind! I have a very similar recipe to this that I grew up on, except mine has sweetened condensed milk in it. It’s aaaaamazing, but I’d be curious to try your recipe, especially with the marshmallows!

Caramel popcorn is smack to me!!! I. Cannot . Stop. Eating. It.!!! I LOVE caramel popcorn more then life itself. Hence, I cannot make it very often. But I am always up for a great caramel popcorn recipe, so I’m excited to try your recipe (with less popcorn because I love more caramel in my caramel popcorn)

Your butter toffee popcorn is our family favorite (but we use dark brown sugar and light corn syrup, swapped out bc I never have dark syrup). We love it! So this isnt crunchy? Would this be what I could use for caramel popcorn balls? My kids love the idea of popcorn balls but always think they taste so plain and just sweet with no flavor

Made this into popcorn balls today with the kids and everyone loves it. We made mini popcorn balls and they’re super cute and easy to eat one after another, after another, after another….
We made the peanut butter popcorn earlier this week. Let’s just say, we are fans.
Not stirring during the last few minutes makes the most amazing difference to the caramel corn. Also, an in between gooey and crunchy can be had by baking less time than standard recipes for those who like gooey but not sticky.

What a hoot, I can’t resist this kind of pop corn, it is a wonder I have any teeth left growing up on a certain bought caramel peanut pop corn in Australia. It was called “Lolly Gobble Bliss Bombs” holy cow I thought it was the best thing I had ever tasted. Now in saying this I’m quite sure your recipe will be amazing as usual.
