Butterscotch Rice Krispie Treats
These easy butterscotch rice krispie treats are magical. Browned butter gives them a hint of salty, caramel flavor, and they are out of this world delicious.
No better way to ease back into blogging than with an easy as can be recipe like these butterscotch rice krispie treats.
You may not have realized you needed a recipe for butterscotch rice krispies in your life, but trust me you do. They are definitely one of those recipes that ends up being more than the sum of its parts.
They are really special.
I’ve made these rice krispie treats a dozen or more times over the last several months. They’ve become my go-to treat offering when I take a meal into someone. And my family can’t get enough of them either.
You wouldn’t think that adding a handful of butterscotch chips to already delightful rice krispie treat batter would make a difference. But it certainly does.
The combination of browned butter + butterscotch + a healthy dose of vanilla and salt gives these rice krispie treats a luxurious caramel vibe that is irresitible.
Butterscotch Rice Krispie Treats Lineup
For these simple treats, I use:
- 1 stick of butter (browning it is key!)
- a 16-ounce bag of large marshmallows (can use the same equivalent of mini marsh’s)
- 8 cups of rice krispies
- pinch of salt + drizzle of vanilla
- 1/2 cup butterscotch chips
Brown the Butter Already
Since I know it will probably be asked, yes, you can make these treats without browning the butter. But I have to ask: will you truly be able to live with yourself if you skip that step?
Because, really, browned butter is one of the keys to truly exceptional rice krispie treats. I do it every time I make regular ol’ rice krispie treats. And it lends the best flavor to these butterscotch rice krispie treats.
It really only takes about three extra minutes. Totally worth it!
The world of rice krispie treat variations is endless. But I’m not sure any other version will surpass the deliciousness of these butterscotch wonders.
Even for this chocolate loving gal, they are absolutely superb. I think it’s the slightly salty, caramel vibe. Man, they’re good.
My self-control completely flies out the window when faced with a pan of these and no one else around to monitor the consumption.
I guess this is the one and only time I should be glad I’m rarely alone in my house. (Although I’m definitely not above hiding in the pantry for some rice krispie one-on-one time and praying no one finds me.)

Butterscotch Rice Krispie Treats
Ingredients
- ½ cup (113 g) salted butter
- 16 ounces (454 g) large marshmallows
- 1 teaspoon vanilla extract
- Pinch salt
- 8 cups (227 g) crisp rice cereal, like Rice Krispies
- ½ cup (85 g) butterscotch chips
Instructions
- Butter the bottom and sides of a 9X13-inch pan. Set aside.
- In a large saucepan, melt the butter on low heat and let it cook until the solids start to turn golden brown and it smells caramelly and fragrant (here's a browned butter how-to if you'd like a visual).
- Add the marshmallows and cook on low, stirring constantly until mostly melted, a few small lumps here and there are ok. Add the vanilla and salt and stir to combine.
- Remove the pan from the heat and add the rice krispies and butterscotch chips. Stir until evenly combined.
- Scrape the mixture into the prepared pan and using lightly greased or barely wet (with cold water) hands, lightly press the mixture into the pan (mashing them too hard and you’ll end up with very firm rice krispie treats – so use a gentle hand if you want them chewy). Let cool before slicing into squares.

Easy and Yummy. Beginning to end, I think, took 15 mins. I didn’t have enough butterscotch chips so threw in some milk and semi sweets to make up the difference. Browning the butter is the key. Don’t forget the vanilla. Kids and adults will LOVE them.

These are so yummy and so easy it feels like I am somehow cheating! I have made them three times, most recently as a father’s day dessert. The browned butter tutorial is very helpful. My pans are very heavy and it took longer than described to achieve the color ai wanted but the flavor was worth it.
I’ve made them three or four times. Purists, you don’t know what you’re missing and may need to try a bite. Super excellent rice krispie treats!
Does anyone know if I make this with Earth Balance sticks (nondairy butter), if you can still get that same browned butter taste effect?
I’ve made this several times over the last few weeks. I used a generic store brand of butterscotch chips and the flavor was pretty mild, so the next time I used nestle butterscotch chips but added additional chips and it was too strong (we ate them anyways). The next time I followed the recipe exactly and used the 1/2 cup of nestle butterscotch chips and it was the perfect amount. This will be in constant rotation in our house from now on. So much more flavor than regular Rice Krispy treats. So yummy!

I’ve now whipped up like 5 batches of these butterscotch-y crunchie bars and need to comment. My family has declared that these bars are the BEST cereal bars on the planet… they are so easy to put together I almost feel guilty. 🙂 My daughter-in-laws keep asking what’s the secret?? I somehow dodge the question because I love how much they love them and currently think I’m something special because of these simple, simple bars! LOL Is it wrong to not tell them about browned butter and butterscotch chips??
These are perfection. Have taken them to 2 bbqs and a bake sale this week. Plate licked clean every time. That carmelized butter mixed with butterscotch is out of this world.

I didn’t have butterscotch chips but did have caramel bits so used those instead… they turned out so yummy! I decided to go for a salted caramel vibe and sprinkled some kosher salt on top as well, yum! Thanks for the recipe Mel!
When I first saw this recipe I thought, “hm, butterscotch and rice crispy treats… two things I love and the hubs doesn’t. guess I’ll just have to plan on eating them, and maybe sharing them.” I printed the recipe immediately, but just got around to making them today. I couldn’t wait to let them cool to eat a massive chunk. Is it just me, or are warm rice crispy treats better than room temp?

Also, funny story- when I was in college and my (now) husband and I were dating, I had a major craving for rice crispy treats. So, he tagged along while I went and got the stuff and made said treats. While I’m raving over how excited I am he gently says, “by the way… I dont like rice crispy treats.” At first I was mad that he hadn’t told me an hour earlier, but in the 14 years since, Ive been happy not to share my rice crispy treats. Ha!

Made these for my Krispie loving husband yesterday. Woke up this morning and discovered “someone” had apparently done a little midnight snacking and nibbled away half the pan! I’ve been on the brown butter rice krispie train for a while now lol. They’re sooo good ! I add extra mini marshmallows right before I put them in the pan so they just slightly melt….yum ! I’ll have to try with butterscotch
