Caramel Pear Crisp
This easy caramel pear crisp combines tender, juicy pears, rich caramel sauce, and a buttery crisp topping for an irresistible fall dessert.

Why This Pear Crisp is The Best Dessert
I am a die-hard chocolate fan, and yet, this caramel pear crisp is one of my all-time favorite desserts ever! Here’s why:
- Pears and caramel are a perfect match. Juicy, ripe pears are naturally sweet and flavorful, and the rich caramel sauce makes them even more delicious.
- Don’t get mad, but…pears make a better fruit crisp than apples. The flavor! The texture! Plus, pears soften more quickly in the oven than apples and lend a creamy texture to the fruit filling.
- Homemade or store-bought caramel works. Use a homemade caramel sauce or take the easy route with a tasty store bought version. Both options work well here.
- The buttery streusel is irresistible. It bakes up golden and crisp, with pockets of warm caramel bubbling through the topping.
- This crips is an easy, impressive dessert. The caramel pear crisp is so much more than the sum of it’s (very simple!) parts. It is especially exceptional served warm with vanilla ice cream and an extra drizzle of caramel sauce.
Ingredients Notes
- Pears: You’ll need about 8 large, ripe pears for this crisp (4 pounds). Peel, core and dice the pears. Don’t dice the pears too small or they’ll cook down too much/get mushy while baking. I prefer using Bartlett pears for this recipe.
- Fresh lemon juice: This ingredient helps the pears retain their bright color and also adds a pop of fresh flavor.
- All-purpose flour: The flour is used to help thicken the filling and
- Ground cinnamon: Cinnamon is used in the filling and in the streusel topping.
- Caramel sauce: Homemade or store bought caramel sauce sweetens the pear filling. See the recipe notes for the homemade recipes that work well in this recipe. For store bought, I like Trader Joe’s or Ghirardelli caramel sauce.
- Brown sugar: Light or dark brown sugar can be used in this recipe. Lightly pack it into the cup to measure.
- Old-fashioned rolled oats: The oats add delicious heartiness to the streusel topping. I prefer using old-fashioned rolled oats, but quick oats can be subbed, if needed.
- Butter: I use salted butter. If using unsalted butter, increase the salt in the streusel by 1/4 teaspoon.
Not listed, but deliciously optional: vanilla ice cream and additional caramel sauce, for serving with lightly warmed pear crisp.
Additional Notes
- Choose ripe pears: The pears should give slightly when pressed near the stem but shouldn’t be overly soft or mushy. Very ripe pears can break down too much while baking.
- Adjust the sweetness: Pears vary quite a bit in sweetness. If your pears are especially ripe and sweet, consider reducing the caramel sauce just a bit in the filling.
- Peel the pears: I know, I know, pears can be a bit annoying to peel, but don’t skip this step. The pear skins alter the texture of the filling (and not for the better!).
- Watch the salt: Salted caramel sauce will give the dessert more contrast. If the caramel sauce you are using is fairly salty, you may want to slightly reduce the salt in the filling or streusel.
- Let it rest before serving: A 20- to 30-minute rest allows the filling to thicken and set up.
This caramel pear crisp has become one of my favorite ways to enjoy pears! The pear filling, buttery streusel, and bubbling caramel are so good together.
If pear desserts don’t usually make it onto your must-make list, give this one a chance. It has won so many people over (including me!). I think you are going to love it.
Divine Caramel Pear Crisp
Ingredients
Pear Filling:
- 4 pounds ripe pears (about 8 medium pears), peeled, cored and diced into 3/4-inch pieces (see note)
- 3 tablespoons fresh lemon juice
- 3 tablespoons (27 g) all-purpose flour
- ½ teaspoon cinnamon
- 1 cup (340 g) caramel sauce, homemade or store bought (see note)
Streusel Topping:
- 1 cup (212 g) packed light brown sugar
- 1 cup (142 g) all-purpose flour
- 1 cup (100 g) old-fashioned rolled oats
- 1 ½ teaspoons cinnamon
- ½ teaspoon salt
- ¾ cup (170 g) (1 1/2 sticks) salted butter, cut into pieces
For Serving:
- Vanilla ice cream
- Additional caramel sauce
Instructions
- Preheat the oven to 350 degrees F. Lightly grease a 9X13-inch pan and set aside (a slightly smaller pan will work fine, too).
- For the pear filling, in a large bowl, add the pears, lemon juice, flour and cinnamon. Toss to combine.
- Add the caramel sauce and stir to combine well.
- Spread the pears evenly in the prepared pan.
- For the streusel topping, in a medium bowl, whisk together the brown sugar, flour, oats, cinnamon, and salt.
- Add the butter and use a pastry blender or two butter knives to cut the butter into the dry ingredients until the mixture is crumbly.
- Spread the streusel topping evenly over the pears.
- Bake the crisp until the pears are tender and the streusel is golden and edges are bubbling, 45 to 50 minutes.
- Remove the crisp from the oven and let rest for 20 to 30 minutes for the filling to thicken and set up.
- Serve the crisp warm or at room temperature.
- If desired, serve with a dollop of sweetened whipped cream, a scoop of vanilla ice cream, and/or a drizzle of additional caramel sauce.

I took the giant palettes of organic pears at Costco as my sign to finally try this recipe and it was a huge hit with everyone! I cheated and made the caramel sauce in the microwave and it was so divine I may have eaten a few spoonfuls here and there (obviously after it had cooled down from the molten lava stage). I have had this recipe in my Paprika app for a couple years but never made it until yesterday to take to our friends home for a dinner party. Another dinner guest, a 90 year old man who is known to all to be a lover of desserts and sweets, rated my offering to be a 12 out of 10. Everyone agreed. I think I will be using this as a base for all fruit crisps in the future. AND….the delicious and easy caramel sauce will now be my new go-to.

I made this recipe for tonight’s dessert. I didn’t include the caramel sauce in the actual pudding but will top the ice cream with it. I love pears, even more than apples. Can hardly wait to dig into this dessert. And there is lots of topping. Thanks for sharing.
When I couldn’t eat all of the pears given to me by a coworker, I looked through many pear crisp recipes before deciding on this one. Rather than make my own caramel sauce, I used Mrs. Richardson’s. Wow, who knew that mixing the caramel sauce into the sliced pears would add such a wonderful depth of flavor without being too sweet! Also, I cooked this crisp on my barbecue rather than in an oven due to an ongoing kitchen remodel. This recipe was easy and delicious; it is definitely a keeper!
I made this today because I didn’t know what to do with the left over pears my husband picked for me to make preserves. I can’t say anything about this that would make anyone know really how delicious this pear crisp is. I know that I will be waiting with my gun in the morning to run the squirrels and birds away from my tree.LOL

Oh, Mel, this was an outstanding dessert! I made it for Sunday after church late lunch with the super easy so delicious caramel sauce. To say my crew loved it would be an understatement. It was unanimously decided to forego Sunday supper in favor of another bowl of this pear crisp with ice cream/caramel sauce. Mom ditched the ice cream so I could have more of the crisp and extra caramel sauce. 🙂 So thankful for you in our life.

Made this to use up some pears from costco that did not want to get soft. I skipped the caramel sauce (little too decadent for a random weekday for us) so I just added a little brown sugar. I also doubled the oats because I am breast feeding and I get a little crazy for oats. I had to bake it for a little longer but it turned out excellent even without the caramel! I also was able to throw it all together in maybe ten minutes which was awesome. I may have to use this topping ratio for some apples later but the pears where a great change!

I haven’t made that sub but I’m pretty sure it will work fine (it will change the texture of the crisp part a little but you’ll still get the oatmeal flavor).
P.S. My pears were green right off the tree and softened up nicely when baked, not too mushy and not too crunchy either still. Everyone said that if I hadn’t told them they were pears, they would have thought they were apples!

I just happened to have 5 large pears in my kitchen last night and because I LOVE PEARS I made this!!! OH MY YUMMINESS!!!! I put whipped cream on top instead of ice cream and then the carmel sauce. Mel, these were heavenly inspired right down to the very last bite. I had your “crunchy topped swiss chicken bake” with the “baked brown rice” AND these “caramel pear crisps” all in the oven at the same time this evening (with the “baked cheesy zucchini bites” following). I had everything timed down to the minute with a road map carefully laid out with every last detail/ingredient planned. Everything was supposed to go like clock work while my 11 month old was napping. It turned out that he slept for only 30 minutes out of the 2 hours he was supposed to be down and our dinner guests canceled!! Oy… BUT, the caramel gods were still shining down on my kitchen as EVERYTHING turned out so yummy and perfect. When it came time to dish my husband the dessert, I gave it to him and went back to the kitchen for mine, and paused to see what sounds I could hear. Waiting, waiting, waiting and suddenly in a low voice, “Oh whoa. Wow, this is good.” And that made it all worth it. Pear crisp Santa definitely made it to our house tonight. Thank you!

Looking forward to your caramel info. I made this last night and I can’t figure out what I did to the sauce to make it hard and gritty. The heat didn’t seem too high and it doesn’t taste burnt. Maybe I stirred it too much? However, the pear crisp was still delicious!
Hi Amy – sometimes caramel can be a little finicky (even easy recipes like this) if it is over-stirred. What happens is that sometimes sugar crystals higher up on the pan can get reincorporated to the caramel mixture and the texture can be sugary instead of smooth. It’s important to moderate the heat while the caramel simmers for the 10 minutes so that stirring isn’t needed.
Do you use ripe pears or can they be hard?
Fairly ripe and soft are best, I think. You can ripen pears quicker by placing them in a paper bag with an apple, banana or avocado overnight or for a day or two (depending on how hard they are).
Just got pears from my grandpa’s pear tree… will have to make this in a few days when they are fully ripe and ready to use!

Good question, Emily – I’m partial to Bartlett pears. I think they are less mealy in texture and much juicier than Anjou but you probably could use either (even a red pear perhaps?) and be fine.

I LOVE peach crisp and apple crisp. Never heard of pear crisp though. I am not as fond of pears as the other fruits. This does look tasty with the caramel. Need the recipe to make it like yours. Ha!!!

Hey Miss Meri – I think canned pears will be too soft for this recipe. Fresh pears will soften while baking but still keep a bit of their shape which is what you want.
