The Best Cornbread Muffins
These easy one-bowl cornbread muffins are the best! Tried-and-true, I’ve been making them for over a decade. They are light, fluffy, and so, so good!
You know a recipe is a keeper if it’s stuck around as a tried-and-true favorite for over a decade. I have serious commitment issues to recipes – I’m always wanting to try new versions of this or that.
But the minute these light and fluffy cornbread muffins came into my life, I haven’t needed or wanted another cornbread muffin recipe.
They are so fast and easy to whip up. And even though cornbread muffins can get a bad rep for being dry and sawdusty, these are nothing like that! Moist and tender, they are perfect!
Cornbread muffin batter
The batter for these best-ever cornbread muffins is crazy easy! Don’t blink or you’ll miss how quick it is to whip up a batch.
Dry ingredients + wet ingredients + mixing JUST until no dry streaks remain.
These cornbread muffins are like any other good muffin recipe – over mixing will be the death of your light and fluffy texture!
So don’t go overboard. A few lumps are ok!
Even the batter will appear fluffy and even kind of spongy as you scoop the muffin batter into the prepared muffin tin.
I use a large cookie scoop to easily portion the batter into the muffin tin.
Let’s talk muffin tins
If you pile the batter into the muffin tin, this recipe will make about 12 muffins. I use USA brand muffin tins (they’re amazing). The cups are a bit deeper than a regular muffin tin so I only get 12 muffins.
But if you fill them less full, you might get 14-16 muffins.
Bake these beauties for 15-18 minutes until they are perfectly domed and the tops spring back lightly to the touch. There might even be some small cracks on top of the muffins.
That’s a-ok!
It’s highly appropriate to slice these muffins in half straight from the oven and slather in butter and honey.
You can also show some self-restraint and serve these lovely cornbread muffins with everything from chili to tacos! Honestly, there’s no wrong way to eat or serve them.
They are fantastic, and I hope they become a tried-and-true favorite for you, too! I can’t imagine any other cornbread muffin being as good. They are the best!
Cornbread Muffins
Ingredients
- 2 cups (284 g) all-purpose flour
- 1 cup (170 g) yellow cornmeal
- ¾ cup (159 g) granulated sugar
- 1 ½ teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 large eggs
- ¾ cup (170 g) sour cream
- ½ cup milk
- 8 tablespoons (113 g) butter, melted and cooled slightly (I use salted butter)
Instructions
- Adjust an oven rack to the middle position and preheat the oven to 375 degrees F. Grease a 12-cup muffin tin or line with paper liners.
- In a large bowl, whisk together the flour, cornmeal, sugar, baking power, baking soda and salt.
- In a smaller bowl or liquid measuring cup, whisk together the eggs, sour cream and milk.
- Add the wet ingredients to the dry ingredients. Add the melted butter. Whisk or stir with a rubber spatula until no dry streaks remain. It’s ok if there are small lumps. Don’t over mix!
- Evenly divide the batter into the prepared muffin tin.
- Bake until the muffins are light golden brown and a skewer inserted into the center of a muffin comes out clean, about 15-18 minutes, rotating the muffin tin from front to back halfway.
- Cool the muffins in the tin 5 minutes; invert the muffins on a wire rack, stand the muffins upright and cool 5 minutes. Serve warm.

Just made these to go along with your slow cooker chili for tonight! They are light, fluffy and delicious! I subbed plain yogurt for the sour cream because i didnt have any and it was wonderful! I ground my own cornmeal for them, do you have any idea the best way to store fresh ground cornmeal?
I’d probably store it like I do freshly ground wheat – in the freezer.

This recipe is so versatile and delicious! Instead of making muffins, my son and I made cornbread waffles with our beans tonight. We did add extra milk to the recipe to allow for the right consistency of batter (no exact measurement. just by eye.). Let’s just say, my 3 year old won’t stop asking for these waffles. Hi. I have looked at both of your cornbread recipes and am considering combining the two. I am doing a food booth this month and I will be making a lot of cornbread to go along with soup beans. Since I need to freeze the muffins, in order to assure that they will stay moist I would like to add sour cream. You’ve said you like your cornbread recipe best. Would adding sour creme to it make it too “wet”? Thank you. 🙂
Kim – you’d have to experiment adding sour cream to the cornbread recipe and yes, you might need to increase the dry ingredients just a tad to compensate.

Hello 🙂 Nice recipe, I would also like to share my favorite cornmeal muffins recipe 🙂 Unfortunately, I have no picture, but i SWEAR they are <3 perfect <3:
Ingredients:
6 tablespoons of white meal
6 tablespoons of yellow cornmeal
1 small package of baking powder OR 1 tablespoon of baking soda = the same effect
150 grams (european) of white cheese
1 cup of sour milk (I don't know how it's called in America, you can also just take ½ cup of yoghurt and ½ cup of water, mixed together – instead of the sour milk)
3 eggs
½ of a cup sunflower oil (or any other, try on your own risk)
a little bit of salt
1. Take a bowl, mix inside it the cornmeal, the white meal and the baking soda
2. Now take another bowl and mix the cheese and the eggs, add the salt, the sour milk and the oil into it and stir well
3. Mix the ingredients from both bowls together
4. Bake it in a muffin mold for about half an hour at ca. 180°C

I realize this is months after anyone asked about using this recipe in muffin tins, but I just tried it tonight and it worked great. I think the muffin tin route made them a titch drier than when just baking it in a square pan though. I’m making them to take dinner in to someone, so I thought the muffins might be a little easier. I loved it as corn bread and I have to say as corn muffins, it is pretty darn good too! Best corn bread recipe I’ve ever tried, hands down!
These are great and they do freeze well…now I definitely need to try the cornbread w/honey butter next (Does that freeze well too?)
Elizabeth – I’ve never tried freezing the other recipe for cornbread (made in a square baking pan)…I think the cornbread muffins would probably freeze a bit better than the pan cornbread.
Thank you! The reason I wanted to know is probably going to freak you out and I wouldn’t have given you a heads up but now I have to since I asked too many questions and made you suspicious. I’m entering a lot of stuff into the state fair food competitions this year, as many as I can. Last year I entered some things, most original recipes, and won 2 first place and one 3rd and was a little bummed that I travelled that far only to win three. So I decided I will do as many as I possibly can to make it worth the long trip, even if I don’t have a killer recipe. I decided to use some of your bread recipes and some friends’ recipes for other things and most of them I don’t even plan to try out before taking them! See? I’m crazy. I will try as many as I can to make sure it’s what I want to enter, but the reason I was asking all the questions was to narrow down how many things I have to try before deciding. 🙂 See? I’m crazy. And now you’re probably nervous! Wish us luck–haha. I will DEFINITELY let you know if & how many of your recipes win ribbons. That way you can rename them things like Blue Ribbon Cornbread–hahaha. Veronica – the fluffy honey butter undoubtedly sweetens the deal a little but even without it, the cornbread would win out. Like I said, the muffins are great, but the cornbread has a deliciously soft, tender crumb that just melts in your mouth.
So now tell me…why all the questions (and of course I don’t think you are a pest!)? I’m weird too, so I won’t judge you, I promise. 🙂

As for the drizzling – I fill a small ziploc bag with the melted chocolate and then cut off a tiny (very tiny) tip of the corner and use it to drizzle the chocolate. It works wonders!
P.S. Do you have to make these as muffins or could you bake it in a casserole dish and make cornbread? Also do you freeze them after they are baked?
although i’m southern through and through, i do enjoy a bit of sugar in my cornbread. i think your muffins sound great (but don’t tell my grandpa). 🙂

Just wanted to let you know I made the cookie dough truffles yesterday and they were WONDERFUL! I don’t really like cookie dough, but they were so creamy- just like truffles! The recipe was so fool-proof, I couldn’t believe how good they taste. More than that, I couldn’t believe how EASY they were. I’ve never used Almond Bark before, and it worked perfectly! I just finished baking these and taking them out of the oven. I used my 4 oz ice cream scoop to put the batter into the muffin pan. I got 12 even. They popped right out of the pan. I did not use paper liners.

Hi! Do you mean 3/4 c. sugar? These muffins do look good! My husband likes to take the batter and make pancakes out of them. Used to make them from Jiffy mixes, but now we grind popcorn in our wheat grinder…yum!
