Creamy Chicken Gnocchi Soup {New and Improved}
This creamy chicken gnocchi soup is one of our family’s favorite soups of all time! A new, streamlined recipe makes it easier than ever!
We have long loved classic chicken gnocchi soup. It is thick and creamy. Hearty and delicious.
And not a single soul complains when it appears for dinner. Over the years, I’ve tweaked our recipe to be even easier (and yummier!).
How to Make Chicken Gnocchi Soup
This soup starts like many other soups.
- saute carrots, onions, garlic and a few seasonings until they start to soften
- add broth and simmer until veggies are tender
But instead of dirtying another pot or complicating the recipe by making a roux (flour + butter) to thicken the soup, milk and flour are blended together and added to the simmering soup.
This thickens the soup perfectly!
What is Gnocchi?
Gnocchi is a dumpling-type pasta usually made from potatoes (and also eggs and flour). It is pillowy soft once cooked, and it cooks fast!
Widely available at most grocery stores in the pasta aisle, it is usually in vacuum-sealed type packages.
After the gnocchi are added to the soup and they cook for a few minutes, the soup thickens even more. Not to sludge-level, just to perfect-for-a-bread-bowl level.
After the gnocchi cook, fresh spinach and cooked chicken are added to the soup.
This bulks up an already delicious soup with a pop of color, nutrition, and heartiness! At this point, the soup just needs to simmer until the spinach is wilted and everything is heated through.
Thick and Creamy Soup
This creamy chicken gnocchi soup is thick and hearty. And the flavor is out of this world delicious.
The flour + milk mixture and the gnocchi help thicken the soup perfectly. It will continue to thicken as it cools, as well. Often, I’ll make it, take it off the stove and let it cool for 10-15 minutes before we eat for maximum thick-creaminess.
It also keeps very well in a slow cooker if you need to make it ahead and keep it warm (I haven’t made it in the slow cooker, just used it as a keep-warm device).
If you’ve never ventured into the world of gnocchi and particularly: gnocchi soups, this recipe will hopefully push you over the edge to try!
This is one of my most oft-made soups for company and also when I need to take dinner to someone during soup season.
It’s hard to resist those tender little dumplings bobbing around in the creamy soup. Such a favorite, this one.

Chicken Gnocchi Soup {New and Improved}
Ingredients
- 1 tablespoon olive oil
- 1 cup diced carrots, about 3 medium carrots
- ½ cup diced onion, about 1 small onion
- ½ teaspoon dried thyme
- ½ teaspoon salt
- ¼ teaspoon black pepper (I use coarsely ground, use less for finely ground)
- 3 cloves garlic, finely minced, or 1 teaspoon garlic powder
- 2 cups chicken broth (I use low-sodium)
- 3 cups milk
- ¼ cup all-purpose flour
- 16-ounce package gnocchi (see note)
- 2 cups cooked, chopped chicken
- 2 cups coarsely chopped fresh spinach
Instructions
- In a large pot, heat the olive oil over medium heat until rippling and hot. Add the carrots, onion, thyme, garlic, salt and pepper, and cook until the onions start to turn translucent, 3-4 minutes, stirring often.
- Add the broth. Bring the soup to a simmer, and cook for 10-15 minutes until the vegetables are soft (but not mushy).
- Whisk or blend the milk and flour together until smooth. Add to the soup, and simmer over medium or medium-low heat until the soup is slightly thickened, 4-5 minutes (it will thicken more in the next step).
- Add the gnocchi, and bring the soup to a simmer. Cook for 5-6 minutes until the gnocchi are tender and the soup has thickened a bit more.
- Stir in the chicken and spinach and heat through, 4-5 minutes. Add additional salt and pepper, to taste, if needed.
- Serve immediately or keep warm in a slow cooker to serve later. The soup will thicken more as it cools.

I *think* that should work just fine as long a the texture is sturdy so the gnocchi don’t disintegrate while simmering in the soup.
This soup is so tasty! I’m very generous with the amount of spinach I add, but I really like that it is chopped before adding it to the soup. I used to avoid adding spinach to soups because I didn’t like the texture of big blobs of cooked spinach. Don’t know why I never thought to chop it first, but now that I see the effect of chopping it, I’m doing it in other recipes as well.
One of my favorite winter comfort soups!!! For the gnocchi, I buy Trader Joe’s frozen Gorgonzola Gnocchi. I use the whole bag… it has big chunks of gorgonzola cheese that melts into the soup and takes this recipe over the top!!!
I used whole milk and felt the liquid was very bland. I added dry white wine and a little bit of Better than Boullion chicken flavor paste. My family loved it!
Love this so much. Was looking for a way to cook with gnocchi and have made it several times now, perfect comfort food for fall and winter. I put some crusty sour dough from the local bakery on the table with it. Sometimes I just leave out the chicken if I’m not in the mood for meat and throw chicken fingers in the oven for the kids. Mel, you’re the best.
Can this soup be frozen ?
Because of the high dairy content (and the gnocchi), this soup doesn’t freeze super well. The gnocchi will be much softer (maybe even slightly soggier) after freezing and reheating.

After all the positive reviews, I really had high hopes for this recipe. However, for me, it fell flat – not bad, just mediocre. FYI – I followed the recipe to a T, with the exception of needing to add more broth, as it was very thick.
First time trying gnocchi and the last time. The rest of soup tasty. What I have done is carefully picked out the gnocchis and kept the rest of the soup for tomorrow’s lunch.

I made this for the first time for our family Christmas eve gathering. Usually would test recipes, but if you say it’s good, I believe it! Substituted homemade turkey stock we canned last year, and also canned turkey. Turned out great, good reviews all around. Thanks for being so dependable!

Yes, you could cook the chicken that way.

I use AM in potato soup and when baking.
Great directions.. never used water/kosher salt.. turned out perfect.. i did use butter AND olive oil… had thick breast, cut in half.. Super moist.. always cooked chicken lower… this needs to be done EXACTLY as recipe states.. great flavor.. will try different seasonings in future.. thanks a bunch..

Have you tried this with frozen gnocchi? If so do I cook before adding or add in the soup frozen and let it cook. Doing grocery pickup and dried isn’t available.

I haven’t made this with frozen gnocchi, but it should work just fine! The cooking time for frozen gnocchi is still pretty fast. I would add it to the soup frozen.

I made this tonight for supper along with some homemade focaccia bread. This was very easy to make and very tasty. The only thing I did different was to add a little more chicken, carrots, and spinach and a cup or so more broth. Very good, thanks!

Can this soup be made a day ahead? Is it just as good the next day?
Yes, I think it can be made a day ahead of time. It will thicken quite a bit in the fridge, so you may want/need to add milk or broth when reheating.
This soup has been one of my family’s favorite for years! I will have to try it with your changes. Anyway to have fewer dishes is always good!
Can you use 1% or skim milk in this soup? I love your chicken wild rice soup with the fat free half&half.
I haven’t used skim, but I usually make it with 1% or 2% and it works great!
Have you ever used the DeLallo mini gnocchi in this recipe? I’m making my grocery list and see there’s the regular size and the mini and wondering which would work better in the soup.
I haven’t used mini size but they would probably work great!
Try this with the Trader Joe’s mini ravioli instead of gnocchi, add a parmesan rind to the soup, and use Italian seasoning instead of thyme. If you really want to go over the top, add a splash of cream! One of our family favorites!
