Delicious Ground Beef {or Turkey} Stroganoff
This delicious ground beef stroganoff (can use ground turkey!) is quick and easy – perfect for a weeknight meal and so tasty, it is sure to be a hit with the family!
There is absolutely nothing fancy about this meal. But man, it makes for a great, quick weeknight meal.
My kids love stroganoff.
Whenever we have it (and we have several recipes that are made often, including this one), statements like the following are rampant, “Mom, I love stroganoff” and “I’m totally having stroganoff for my birthday dinner” and “Stroganoff is the nectar of the Gods.”
Ok, so they’ve never said that last one but I’m pretty sure they’d agree if they had any idea what it means.
To be honest, I think they just like saying the word “stroganoff.” Pretty fun and exciting if you are 6 years old and get a kick out of saying random words over and over.
The stroganoff version today is a remake from the classic creamy ground beef stroganoff I grew up eating.
Nothing against that version (promise, mom!) but we greatly enjoy this equally fast and yummy stroganoff made with a simple homemade sauce instead of cream of mushroom soup.
The great news is that making it from-scratch takes hardly any more time than opening up a can of condensed soup.
It’s such a perfect weeknight meal and the flavors are down-home delicious.
Here’s my disclaimer: this meal will not win you awards and fame for gourmet cooking, but it will provide a wonderfully tasty, hearty meal for the enjoyment of all.
Sometimes that’s about all you can ask for and I’m totally ok with that.

Delicious Ground Beef {or Turkey} Stroganoff
Ingredients
- 1 ½ pounds lean ground beef or turkey
- 1 small onion, chopped (about 1/2 cup)
- 1 clove garlic, finely minced
- 1 teaspoon salt
- ½ teaspoon pepper
- 8 ounces sliced white button mushrooms
- 4 ounces light cream cheese, cubed
- 2 cups low-sodium beef broth
- ½ cup lowfat milk
- 3 tablespoons flour
- ½ cup light sour cream
- Salt and pepper to taste
- Cooked egg noodles or rice for serving
Instructions
- In a large nonstick skillet, cook the meat, onion, garlic, salt and pepper, on medium-high heat, stirring occasionally to break up the meat into small pieces, until the meat is almost cooked through but still slightly pink, about 5 minutes. Drain excess grease. Add sliced mushrooms and cook until the mushrooms are soft and browned and the meat is cooked through, another 5 minutes or so.
- Add the cubed cream cheese and let the cream cheese melt over medium heat, about 2-3 minutes, before stirring in. Mix gently until the cream cheese is incorporated throughout the meat mixture. In a large liquid measuring cup, combine the beef broth and milk. Whisk in the flour until the mixture is smooth and there are no lumps of flour remaining.
- Stir the beef broth/milk mixture into the meat and cook over medium or medium-high heat, stirring occasionally. Let the mixture bubble and simmer until slightly thickened, 3-4 minutes. Stir in the sour cream and add additional salt and pepper to taste. Serve over cooked egg noodles or hot, cooked rice. Sprinkle each serving with fresh parsley, if desired.

Delicious! To make it even more creamy, I added one can of cream of mushroom soup, leaving out the sour cream at the end. I also added broccoli and green beans to cook with the sauce. Very tasty! Love to all.

I love stroganoff, but some of my family can’t eat dairy. Is their a way to make this dairy free?
You could try using a non-dairy milk for the sauce.
Made this tonight and loved it. I added about 1 1/2 T Worcestershire sauce at the end and it was a great addition.
Can you use steak tips instead of ground meat? Is the recipe the made the same way?
You could definitely try – the steak tips would probably benefit from a quick sear and not overcooking OR slow cooking in a slow cooker so they are tender.
I don’t think I’ve ever commented to tell you, but ever since I found this recipe at least 2 years ago, I make this for my family all the time! I leave out the onions and mushrooms ( bc of my hubs), but make it otherwise as written, and it is just as delicious without them!
This is on regular rotation at our house! I do add 1-2 T Worcestershire at the end (which I feel like I got from someone in the comments). Easy and delicious- and I always thought I hated stroganoff!
Oh man, this stroganoff is creamy and comforting and amazing! I didn’t have any of the low-fat stuff on hand, so I used all regular ingredients and it was really tasty. Definitely saving this recipe for future use.
I’ve been craving comfort food the past few days with the cold, gray, rainy weather and I stumbled upon this since I had ground turkey to use and didn’t want meatloaf. This was fabulous. I loved it. My only changes after reading comments was adding some sherry and I did saute mushrooms first in butter and thyme. It hit the spot completely and I thought it was better than any other recipe I used or that used a cut of beef which was often chewy and I rarely eat ground beef so 5 stars!

Made this exactly as it appeared (I used ground turkey) in the recipe and it really came out wonderful! I normally use the packet, was so happy to see a “regular” recipe. Thanks for posting! Ha, oh shoot wait, I did add garlic and onion salt because I’m addicted to it, so not *exactly* the same, but close!
Made this last night and it was really yummy. BOTH toddlers ate their whole bowl!! And the hubs really liked it to. Only thing I’ll do differently next time is double the sauce, as I didn’t think there was quite enough. Thanks for giving me a way to enjoy stroganoff on a whim!
Love the recipe as is! But sometimes I make these changes: I saute the mushrooms separately with butter, salt, pepper and sometimes a little wine. I also add several sprigs of fresh thyme to the meat and deglaze the pan with wine.
I have always been a big fan of stroganoff. This recipe was easy to follow and turned out great!! I put some oregano and thyme, and a dash of lemon juice and it was delicious! Takes about an hour total. Thanks for sharing.

We have been making this meal since it first was posted but for some reason I haven’t made it in along time….until tonight. My 5yo old said this is the best meal and we should make it when we have company next time. My 2yo agreed with him. All 4 kids basically devoured it! Made this tonight and LOVED it!!! Didn’t get the mushrooms or onion in time so I added onion powder and some worchestershire and lemon juice (just a squirt as per a comment that reccomended this). This was SO good! Don’t tell my mom, but it’s totally taking the place of her cream of mushroom soup version haha. I despise mushrooms so I left those out and per some of the comments added a splash of lemon juice and Worcestershire sauce. This will definitely be made again!

this evening. I made the turkey version (93%) and my family thought it was beef. I followed the recipe almost entirely with the following minor changes; a splash of worcestershire sauce, tablespoon of beef base instead of salt, half cup of frozen peas as a previous comment suggested.

Probably fine if you like the texture and taste of them!
If you have picky kids or don’t like chunks of mushroom, try this: mince the mushrooms or run them through your Kitchen-aid meat grinder and mix them into the ground beef (or turkey), It will not overpower the meat flavor, but complement it. Your meat will be moister and lighter in texture and you wont miss out on the awesome flavor. Kids wont even know. Thanks for this recipe! I’ve wanted to cut out the MSG laden condensed soups and cream cheese is always a win in my book!

Im making with cottage cheese, peas,a little almond milk, and rice!used 1 cup beef broth, .5 cup wayer because of the .5 cup jasmine rice added.This is what I had at home.added sour cream after rice set for 10 min.yum
This was a good recipe. I did make a few tweaks. I added some Worcestershire sauce, dry thyme and some frozen peas and fresh parsley at the end. Dill would probably be nice in this as well.
This is one of my favorite versions of stroganoff and we’ve made it several times. It comes together quickly and I usually have all of the ingredients on hand. Has anyone ever frozen it? Do mushrooms freeze very well. Just curious.
I’ve frozen it once or twice. The texture is slightly grainier – but we still love it (the mushrooms seem to do well).

I’ve got a great tip for those who dislike mushrooms as much as I do. Instead of slicing the mushrooms, put them in a food processor and pulverize the little suckers. Then add to the ground meat, and make the rest of the dish as normal. I guarantee no one will know they’re even there!

I made this for my family last night with a couple of adjustments (we used g. turkey + chicken stock and the whole 8oz of cream cheese) and the kids ate it up, even the mushrooms!!

I made this recipe tonight. It was very tasty. I had frozen beef broth, from a brisket that I baked last month; it makes a very good broth. I used lean ground beef and whole wheat elbow macaroni.
This recipe was great and I made two adjustments: There was too much liquid with 2 cups of beef broth and I like a thick sauce, so I added a scant TBSP of corn starch to the flour and gave the sauce plenty of time to reduce. However, if you are in a hurry you could just use 1 cup of broth. I also found it to be too bland so I added ketchup and Worchestershire sauce (borrowing from another stroganoff recipe), that made it perfect. I forgot to add the sour cream at the end but it still tasted great so I probably will continue making it without the sour cream (I did use whole milk and full-fat cream cheese, though).
I have heard great things from my sister-in-law about your recipes and I am so happy to have come across this one. I have been looking forever for a good ground beef stroganoff recipe and now I think I have found it. I look forward to trying many (if not all) your recipes. Thanks to people like you with such a talent for cooking that you help people like me (who have less talent for cooking) to put something in front of the fam. that they not only will look at without distain but will actually eat.

I’ve frozen this a time or two, Kristi – and it’s ok. The texture changes a bit after defrosting (slightly grainy) but it’s not a deal breaker for us although we prefer the made-fresh version the most. 🙂

Made this last night, another homerun from Mel! I added a dash of worchestershire like some others. It was just like the cream of mushroom soup version my dad used to make, except SO much better. Next time I would just double the mushrooms. Oh, and I used onion powder instead of chopped for the sake of my 3 yr old. Quick and easy! Thank you!
