Easy Homemade Hamburger Helper
Skip the boxed stuff! This homemade Hamburger Helper is made from scratch in one skillet. Creamy, cheesy, and packed with flavor, it’s family-friendly and so delicious!
I grew up eating boxed Hamburger Helper (and loved it!), so this recipe is a bit nostalgic. As it turns out, the homemade version of this classic favorite is heartier, has better flavor, and is even more delicious than the original.

Why I Keep This Dinner in the Rotation
There are so many reasons this homemade Hamburger Helper is a huge family favorite (and also easy for me, the head chef of this family, like it or not, to execute on a busy weeknight!):
- One skillet. The ground beef, pasta, and sauce cook in the same pan. You’ll need a deep skillet (like this one or this one – aff links) to fit this recipe as a regular 12-inch skillet may not be big enough. If you don’t have a deep skillet, you can easily use a saucepan or pot.
- Easy weeknight dinner. This recipe comes together quickly. If you have all your ducks in a row, you can have it on the table in 30 minutes or less.
- No seasoning packet needed. This recipe calls for everyday ingredients that are super accessible rather than relying on pre-packaged ingredients. Making Hamburger Helper from scratch lets you control the seasonings and salt…and the end result is absolutely delicious.
- Family-friendly. This no-fuss meal may not win any gourmet foodie awards, but the simple, ultra-delicious flavors with the creamy pasta are an easy win with kids and adults alike.
A Note About Pasta Variations: The recipe calls for elbow macaroni, but any type of small pasta shape will work, like ditalini or shell pasta. Just pay attention to the al dente cooking times on the package and adjust the cooking time in the recipe, as needed. Protein pastas are really popular right now; I’m guessing that variety of pasta will work just fine in this recipe.

How to Make Hamburger Helper in One Skillet
- In a 12-inch deep skillet or similar size saucepan, cook the ground beef and onion over medium heat, breaking the meat into small pieces as it cooks, until the meat is no longer pink. Drain excess grease.
- To the skillet, add the pasta, beef broth, tomato sauce, salt, basil, oregano, paprika, garlic powder and black pepper. Stir to combine.
- Bring the mixture to a simmer over medium heat, and cook until the pasta is al dente, about 8 to 9 minutes. Moderate the heat and stir often to prevent sticking.
- While the past cooks, blend the milk and flour together until smooth. Stir the milk mixture into the skillet, and simmer over medium heat for 2 to 3 minutes until thickened.
- Off the heat (or over very low heat), add the cheese a handful at a time, and stir the cheese in until melted.
- Serve warm. The pasta will thicken as it cools.
Important Note: Make sure to stir often to prevent the pasta from sticking. Moderate the heat as needed to maintain a simmer without burning the pasta.

A Few Additional Notes
- This one-skillet pasta will thicken as it cools. If it seems like there a lot of sauce/liquid after stirring in the cheese, that’s actually a good thing.
- In the interest of preserving as much sauciness as possible, it’s best to serve this pasta within 10 to 15 minutes after it is done cooking. If you have leftovers, stir in a bit of milk or broth before reheating to creamy it up a bit.
- You can easily add more meat, change the type of meat, or omit the meat completely.
- I prefer cheddar cheese for the flavor, but you could swap in another variety of cheese for the cheddar.
You definitely don’t need to over think this simple meal (lectures the Queen of Overthinking 😉). It is meant to be simple and straightforward. And it really is just easy comfort food at its best.
I hope you love this one!
Also, this is a random note (assuming anyone actually gets this far in recipe blog posts these days), but when I was making batch after batch of this homemade Hamburger Helper to recipe test, I transitioned some of the leftovers into a baked pasta, and it was amazing. I spooned the refrigerated pasta leftovers into an oven-safe baking dish, drizzled a bit of cream over the top, sprinkled with a touch of salt and pepper, topped with shredded cheese, and baked at 400 degrees for 20 minutes or so. SUPER DELISH.

What to Serve With This
- Fresh veggies, skillet broccoli, or skillet green beans
- Fresh fruit
- Cottage cheese (hear me out, this is a really good side dish – gives it lasagn-y vibes!)
- Easy drop biscuits

This is some good comfort food right here. It’s easy to make and can be pulled off with just pantry staples. Thats my kind of meal—quick, easy, and yummy.
Mel’s chili Mac recipe is one of our favorite dinners so we were excited to try it. But the flavors were a little bit of a miss for us, we didn’t love it and will probably stick with the chili mad in the future. As always the recipe was clear and easy to follow though!
Wow! This blew us away at how yummy it was & it was even better because it saved us on a night we really needed groceries. Love how it is all pantry staples!
THANK YOU for taking the time to let me know what you thought!
My kids loved this! I put the extra in an oven safe dish and froze it. How long do you think it would take to cook from frozen?
From frozen, I’d suggest heating it covered in a 325 degree oven for an hour, maybe? Might need to drizzle with broth/add extra cheese too.
Came together quickly with ingredients I always have around the house. Kids went back for seconds, so I declare a win.
Yay!
I am very excited to cook this tonight, but… Why 12 ounces of noodles? Does someone sell that size? Here I have only seen 1 or 2 pound packages, so the smaller portions involve some guesswork. Does anyone that have this issue?
I cook almost exclusively from your website and LOVE LOVE LOVE it!!
Hi Sarah, I totally get that. I tested this recipe with a full 16 ounces and it was too much for a skillet and required weird finagling with the other ingredients. So 12 ounces works best. I use my kitchen scale to measure but you can eyeball (3/4ths of a 16 ounce package). I throw the remaining in a ziploc and use it next time I make something with this type of noodle. Also at my grocery store they do carry 12 ounce bags of these noodles (but not of spaghetti)
Super good meal! I love how quick and easy it came together and didn’t require me going to the store for any special ingredients I didn’t already have on hand. I didn’t grow up on hamburger helper, but this is very much a comfort food dish. My toddlers also loved it, which is a huge win. I will definitely make this again!
Thrilled to hear that, Ashley!
Loved that I could make this recipe with pantry staples. Very tasty, the whole family liked! The addition of smoked paprika was genius!
So happy you loved this one. Thanks for letting me know, Cassie!
Love this recipe!! I added one shredded carrot and 1 shredded zuchinni, and my picky kids will even eat it!
I grew up more on Tuna Helper… can you use your Mel magic to recreate that recipe next?! 😉
Great idea to get some veggies in there! I also grew up on tuna helper/tuna casserole. Gotta get over some trauma from that before recreating a recipe, haha.
It was really good! The whole family ate it. I substituted chicken broth with a splash of Worcestershire sauce for beef broth because that’s what I had on hand. Turned out great. My pasta did take longer to cook than the recipe states.
Thanks for chiming in with your review!
Would you need to adjust the liquid amount if you were to cook this in the instant pot?
There’s enough liquid for it to be instant pot safe…but I don’t know know how it will turn out exactly as I haven’t made it in the IP. Good luck if you experiment
This is delicious homemade comfort food. It came together quickly, was easy to make, and everybody in the family loved it. My kids all took seconds (and some even thirds!), so it’s safe to say it was a hit. This is a nostalgic dinner–but wayyyy better than the boxed stuff. Thanks, Mel!
Yay, Angie! When dinners are well received by the whole family, it’s magical experience. 😉
This was AMAZING THANK U SO MUCH!!! Will make again we all loved it!
I’m thrilled to hear that! Thanks for letting me know!
Delicious and so easy! I have another similar recipe, but this one is better! I added 1/2 cup sour cream for a little tang. Thank you Mel for another winner!
Great idea with the sour cream!
Hi Mel! This is Danielle of shepherd’s pie fame. This post made my laugh! I love it that you grew up on Hamburger Helper because so did I! With microwaved hamburger! 😂 I do not feel any need to re-live it though! 😅
Hahahaha. I GET IT
By the way….I am compiling a cookbook of family recipes for my son and his new bride. After about the third Mel’s Kitchen Cafe recipe, I thought, “I could save a lot of time by just buying Mel’s cookbook! That’s where almost all my good recipes are from!” 😂
😂😘
My MIL makes a very similar dish and has for decades. We call it Grandma’s Hamburger Helper. Huge favorite at our house, especially when it’s a little cool (or really cold) outside. Honestly, it comes together just as easy as the box stuff. Yours is even better bc no canned tomato soup. I insist on only cooking with things made with ingredients I can pronounce! Thank you!!
Ah, I love “grandma” recipes like that! My family has quite a few like that as well!
Looks amazing. So nostalgic for me also. How much of the ground beef amount did you use in the pictures?
My ground beef is in 1 1/2 pound packages, so that’s how much I used for this recipe (and in the photos!).
