Why These Are the Best Rice Krispie Treats Ever
This recipe keeps the simplicity of the much-loved, classic rice krispie treat while still elevating them into next-level delicious territory.

How to Make These Simple Treats
- Cook the butter in the saucepan until the solids are nutty and golden. This is called browned butter and it will change your life.
- Add the marshmallows and cook over low heat until they are mostly melted with a few lumps still hanging around.
- Off the heat, stir in the cereal until evenly combined.
- Press the cereal mixture into a 9X13-inch pan.
Pro Tip: For gooier treats, press into the pan lightly. For firmer, sturdier treats, press into a more firm layer.
Key Ingredients Notes
- Butter: I always use salted butter (better flavor!). European-style butters work well in this recipe, too. Different brands of butter have different amounts of water – so depending on the brand you are using, it may sputter and bubble more or less while browning.
- Large Marshmallows: I prefer using large marshmallows vs mini marshmallows, but in reality, either can be used. Just make sure to use enough and measure out 16 ounces (especially if the bags of marshmallows you are using are the 10- or 12-ounce sizes).
- Vanilla: Don’t leave out the vanilla extract! It pairs so well with the brown butter and adds to the overall flavor of the treats.
- Salt: A pinch of coarse, kosher salt is all you need to help balance the sweet flavors in the rice krispie treats.
- Crisp rice cereal: Like, Rice Krispies or another brand of rice cereal. If you are making these gluten-free, make sure to source a gluten-free cereal (Rice Krispies aren’t labeled gluten-free, but other varieties are, like Aldi or Nature’s Path).
Freezing Rice Krispie Treats
Did you know that Rice Krispie treats freeze super well? They sure do! Cut them into squares, pop into a well-sealed container with layers separated by parchment paper (or put them in freezer ziploc bags) and freeze. They can be frozen for several months and thaw great at room temperature.

Browned Butter Vanilla Rice Krispie Treats
Ingredients
- ½ cup (113 g) salted butter
- 16 ounces (454 g) large marshmallows
- 1 teaspoon pure vanilla extract
- Pinch coarse kosher salt
- 9 cups crisp rice cereal, like Rice Krispies
Instructions
- Butter the bottom and sides of a 9X13-inch pan. Set aside.
- In a large saucepan, melt the butter over low heat and continue cooking as it foams and bubbles. Cook until the butter smells caramelly and fragrant and the small bits of butter solid on the bottom of the pan start to turn golden brown, 3 to 5 minutes (watch closely as brown butter can go from golden to burned quickly!).
- Immediately add the marshmallows and cook over low heat, stirring constantly, until mostly melted with a few small lumps remaining.
- Add the vanilla and salt and stir to combine.
- Remove the saucepan from the heat and stir in the cereal until evenly combined.
- Scrape the mixture into the prepared pan lightly press into an even layer with lightly greased hands. Cool completely at room temperature.
- Cut into squares and serve.

I’ve made these at least a bazillion times and they are absolutely the best Rice Krispie treats ever!! I always use mini marshmallows and then I always had about 1 cup of non-melted mini marshmallows into them when I add the Rice Krispies. I add more than a pinch of salt because I looove salty and sweet. Rice Krispie treat 4eva.

These are so yummy and definitely a big step up from the basic recipe. I only had one bag of large marshmallows (12 oz.) so I reduced the cereal to 7 cups (but hello, kept the whole stick of browned butter!) and they are perfectly yummy and gooey.

Made these for a family gathering (made a double batch) and there were a hit. Not your sad, thin, hard Krispie Treats but soft and chunky and perfect. I could maybe toss in more salt next time, since I love that sweet-salty combo, but really the recipe is super as is!

I would like to have pink rice krispie batter for valentines. I cannot get pink marshmallows here in Newfoundland Canada. Could I add some strawberry jello to make them pink or would the squares get too hard when done?

That’s a great question, but I don’t know since I haven’t tried it. You might try adding a few drops of red food coloring to the marshmallow mixture.

Walmart’s brand of rice krispies are absolutely Gluten Free! Not only is there nothing gluten related in the ingredients but they are also labeled as gluten free on the bag now!
They sell massive bags of these that are resealable, which I always grab when we are running low!
By the way these are absolutely amazing! I have always added salt and vanilla but my goodness the difference the butter being carmelized makes yummy!

Just a quick fyi which you probably already know…I was scrolling through your gluten-free section and saw these (my son just got diagnosed with celiac disease). Anyway, Rice Krispies are not actually gluten free. There are brands out there that make gluten-free crisp rice cereal, but sadly Rice Krispies are not because they contain malt which is from barley which has gluten. They used to be gf, but they changed their recipe. 🙁 Thanks for all the great recipes as always! I love your blog and would be lost without it!

I know that you posted this years ago sarrah! But as a heads up, Walmart’s version/ brand of rice krispies is listed as gluten free on ingredients but as well as Gluten free is boldly written on front of bag! They also sell massive resealable bags or regular sized boxes! Hope this helps, I was just diagnosed with celiacs disease and have been struggling with finding recipes. Thankfully it is starting to get easier!

Ok – I made them today and ate way more than I care to confess to. Finally I cut up the rest of them and put them in the freezer (wax paper in between). Rice Krispie Treats freeze so well and thaw to room temperature in just a few minutes. These are the best Rice Krispie Treats – something about that browned butter and pinch of coarse salt! So good! Thank you
Don’t even try this with stale marshmallows or even softish ones that have all stuck together. They will take forever to melt, possibly burning your painstakingly made brown butter. By the time they melt, if they do melt, your arm and hands will be so tired, you might just have to eat Rice Krispie treats for supper. Hey……

Thanks for this! Rice Krispy treats are one of our favorites. In fact we have a tradition (taken from a friend) of sculpting a Rice Krispy Treat toilet in celebration of potty training. It’s funny, and my boys love it! I’d also like to add that RKTs are a great allergy-friendly treat to take places–you can either use Earth Balance (soy free tastes great!) or a little canola oil in place of the butter and they are still delicious! Plus much easier than the other allergy-friendly baking options.
That is the best tradition ever!
Now we just need your best homemade marshmellows. You know, something without high fructose corn sugar!

While the krispie mix is still hot/warm we add in minimarshmallows for added gooey deliciousness. The minis melt just a bit but add so much yummy goodness.

I made these a little while ago, and all I can say is OMG. I used the Kelloggs brown rice GF rice krispies and only 7 of the 9c. of cereal…and i’m having a hard time letting the treats set in the pan. I keep taking little pieces out to see if they are ready. The browned butter really stands out. Thanks Mel…these are my new favorites.
I’ve also used Rice Chex, since they’re gluten free. We actually liked the different texture, and they tasted pretty similar.
Back in the 60s, we’d add Jello powder to give them some flavor. As a kid I liked them that way. Haven’t had them for awhile made any way!

I LOVE rice crispy treats. Definitely my favorite easy, go to treat. I always tell the funny story of when I was dating my now husband, we were in college and I told him I had a major craving for rice crispy treats. So we ran to the store, got all the stuff (yes, 3 ingredients is ALL ) and hurried back to my apartment. As I’m mixing up the treats he says, “hey babe… I don’t really like rice crispy treats.”
So I ate the batch alone. Hah!! I’ve since worked him down and he will eat them. Not sure if that’s a good thing or not, because now i have to share!
Also, I love love love my crispy treats with coconut oil instead of butter. Amazing coconut flavor!

I’ve started spraying everything (or putting it on a napkin and rubbing it on) to everything. Pot, glass dish, bowl I mix it in, and bowl scraper. With that addition to the process clean-up is a breeze!
