Our Easter menu is very similar to yours! Spiral/honey ham, bacon wrapped asparagus, plus cheesy potatoes or corn casserole. A few years ago I added your honey lime fruit salad to the list and now it’s a must have! This year I plan to try your carrot cake coffee cake. Thanks for all the deliciousness, Mel! I love how food enhances tradition. We love to tie Easter and Christmas together. So Christmas Eve and Easter we do the same meal which is a Mediterranean charcuterie style dinner with fish. It is a crowd pleaser and easy which makes it easier to focus on the day and what it’s about.
But I am totally adding your carrot coffee cake to the menu this year and very excited about it.
